::ENDLESS DARK RITUAL::Blackberry, Black Raspberry, Black Currant, with Gallberry Honey, aged on New French Oak | 14% ABV

Our gold Mazer-winning, waterless triple "black" berry mead is back for its third incarnation, made with incredible honey from Geneva, Florida (thanks to J&P Apiary and Honey ). This honey has incredible buttery-sweetness with notes of molasses. We sourced all the berries from our favorite suppliers: the Black Currants came from Poland, and Black Raspberries and Blackberries came from Willamette Valley.

The ratio of the berries changes each year, we carefully curate it to prevent the devastating tannins of the black raspberries from obliterating your palate or the earthiness of the black currants from overpowering the jamminess of the blackberries. This year’s blend is the most raspberry forward, less dark than last year, and more jammy!

The three berries are melded into their own singular darkness of flavor, showcasing all three simultaneously so you don’t know where one starts and the other ends, but they all come through.

The honey and fruit will continue to intertwine and blossom at the same time, building additional layers of complexity, while the tannins become even silkier with each passing month, for decades to come!

Peach, Yuzu, Sansho, Florida Orange Blossom Honey | 12% ABV

An Uchu Brewing Collaboration | うちゅうブルーイング

As soon as we found out we were selling our mead in Japan we contacted our friend Masa, the Co-Founder and Headbrewer at Uchu Brewing! We've had the pleasure of pouring alongside him at a few major festivals over the years and have always loved his super creative b**rs. A few emails later, we conceived a beautiful mead idea, as well as a delicious smoothie b**r featuring most of the same ingredients.

For those unfamiliar with Yuzu, it’s a Japanese lemon that is more intense than a lemon in both sourness and bitterness, but it also has a sweet Mandarin juice note with floral aromas, it’s wonderfully complex! The Peach and Yuzu came together in a perfect harmony that we wouldn’t have imagined until trying it, they perfectly complement each other. The Yuzu makes the peach juicier, and the peach makes the Yuzu softer.

Finally, the magical last ingredient: Sansho peppercorn. These little green peppercorns are similar to Sichuan peppercorns, if you use a lot of them they have a numbing effect. The first thing you’ll smell is the Sansho, and it overlaps perfectly with the Yuzu aromas, with its citrusy, zesty, almost piney notes. Their smell carries right into the taste as well, perfectly harmonizing with the fruits and adding a wonderfully exotic extra dimension.

If you take your time with a glass, you might be able to tease apart all the components, but together they make a beautiful unified experience of flavors and aromas.

This lush mead harnesses the nuttiness of Ube, wrapped in the creamy richness of coconut and vanilla, certain to cast a spell of binding on all who share in its delights

After years of diving into the chemistry, physics of emulsification, and starch matrices, we finally created a “milky/opaque/hazy” Mead. Coconut milk and coconut cream would normally separate, but we locked them in place for maximum creaminess!

Alongside the release of our meads in Japan, we're releasing a new T-shirt design this week! These shirts are limited and will be available for sale in the Taproom* starting Wednesday 9/9 (Today!)

All of our shirts are printed using a special process that means the design will never fade, crack, or peel, and are printed on high quality soft fabric T-shirts.

It's an event-filled September at Zymarium, and we're getting ready for our Dark Ritual Halloween pop-up coming Oct 1- Nov 7th!

Join us in September for Bonsai-Making, Synth Meetup, Gaming, Craft Club BYO-Lego night, special Jane Austen & Mead talk, Cinnabar Movies, Food pop-ups and more!

While we are always open as usual during all events posted (unless otherwise started), we will be closed later in the month from Sunday, Sept 27th–Tuesday, Sept 29th in preparation for Dark Ritual. BUT will be OPEN again normal hours on Wednesday 9/3O!

Join us for the preview of Dark Ritual on Wednesday 9/30, or the Official Opening Night on October 1st!
