RUM BEACH BLOSSOM || Zymarium x Corporate Ladder Collab
It’s sweet, tart, boozy, creamy, fruity, and floral, just like a perfect cocktail!

This tiki-style Mead was made from the finest Florida Orange Blossom honey, then conditioned on a ton of Pink Guava, Pineapple, Meyer Lemon Zest, and Nicaraguan Rum Barrel Staves. Finally, we fat washed it with over 10 gallons of coconut cream! (16% ABV)

We’ll not only be tapping a keg of the Rum Beach Blossom Mead, but we’ll also be pouring a limited amount of the other half of this two-part collab, the “beer version” of this collaboration, made by Corporate Ladder Brewing: Fathomless Furlough! Thank you and everyone who came out yesterday to enjoy mead + ice cream floats! We had been looking forward to this collaboration with Sampaguita ever since we first started talking about it early last year and everything finally came together to make it happen. If you didn't get a chance to make it out yesterday for floats, we'll see you next time! And if you haven't had a chance to enjoy Sampaguita's incredible ice cream, we highly recommend a visit! (if you stop in, they also have an Ube Noir cheesecake currently available, made using our Ube Noir mead!)

Sampaguita will be at Zymarium Meadery next Saturday (5/30) scooping out their delicious ice cream, and we'll be topping it off with mead for the perfect treat to beat the heat!

Mezcal Barrel-Aged Aztec Hot Chocolate Mead | 16% ABV

Mexican Orange Blossom Honey, Mexican Planifolia Vanilla Beans, Dominican Republic, Uganda & Tanzania Cacao Nibs, Mulato, Morita, & Arbol Chili Peppers,

Aged in a Forward/Slash Mezcal Barrel for 11+ months

This complex blend of sweet, savory, and spicy ingredients blend together to create a symphony of flavor.

The Mexican OB honey offers a dark candied citrus profile that plays perfectly with the slightly smokey agave notes from the barrel.

After nearly a year in the barrel, we treated the mead to a ton of freshly roasted nibs and Mexican vanilla beans which created a luscious chocolate experience.

We then experimented with a dozen different chilies and we ultimately landed on a precise blend, individually steeped to achieve the balance we wanted:

- Mulato: Riper than Anchos, providing bold chocolate and to***co notes.

- Morita: Smoked jalapenos that add sweet, spicy complexity.

- Arbol: Included for a subtle nutty flavor and a touch of heat.

Pandan is a tropical plant with long, bright green leaves, often called "Asian vanilla" for its sweet, aromatic profile. It has a distinct nutty, grassy, and floral aroma, often described as a mix of creamy coconut, almond+hazelnut, and jasmine rice, making it a staple for desserts, rice dishes, and drinks in Southeast Asia. Excited to share we won 3 medals at the Seventh Annual Mead Crafters Competition back in December!!

The competition featured more than 200 entries from commercial meaderies in the United States.

This competition limits entries to three per Meadery, so we had to narrow it down significantly. We chose to focus on entering our local collaborations this year, so our friends could share the awards with us!

> Brood Coffee is our ongoing collaboration with  , every batch features a pairing of different honey with a different coffee. This winning batch was #3, which is long sold out, but batch #4 just released this week!

> Scarlet Majick is our collaboration with Hunger Street Tacos, who not only make incredible food, but also make the best Agua de Jamaica (Hibiscus Tea)!

> Existential Magnetism [FUSION_002] used our favorite Hawaiian honey, Lehua, which has big notes of pineapple and butterscotch. It was then conditioned on over 100 pounds of raw coconut flakes! The coconut absorbed over 25% of the mead, but the sacrifice was well worth the result!

Florida Blackberry-Black-Gum-Tupelo Honey x Ethiopian Yirgacheffe, Worka Coffee 14% ABV

[The highest award-winning coffee mead in the world¹]

This mead is a complex roller coaster of coffee and red fruits ( cherry + apple + berries), all with an alluring coffee aroma that jumps out of the glass!

Brood Coffee is one of our favorite ongoing mead series that we produce, because every batch is made with a different honey, and becuase honey varies by season, pollen, rain, and so many other factors, that means different notes come through in the mead each time. We chose to use this honey for Brood Coffee [Batch 4] to showcase its fruity and caramel notes, which make it a perfect honey for coffee. We work with Lineage to source coffee beans and test different variations to find the beans that will complement these notes and create a harmonious coffee profile. We then "cold-brew" the beans directly in the mead to unlock a whole new symphony of flavors. (The honey is also available in the Taproom!)

If you loved previous batches of Brood Coffee, you’re gonna LOVE batch 4—it's our favorite yet!

What makes these awards extra special is that they compete against all other spiced meads: vanilla, coconut, chocolate, and even the vanilla-coconut-chocolate-coffee combo meads.
