It was amazing to see these ladies out zooming around today! Illinois winters can be tough on the bee population. They made it!

Happy Thanksgiving from our Happy Hive to yours!

I’m bringing a happy cake charcuterie board to our family Thanksgiving. The bite-sized cakes are all gluten free in three flavors: my favorite vanilla chocolate chip Bundt cake, Hershey’s chocolate and pumpkin. I made them in my pan, which has the cutest bee, flower, honeycomb and hive shapes.

The frosting is homemade buttercream. So yummy!

I love this cake pan, but I can never figure out how to frost the tiny cakes because the icing covers the design. I loved this idea to make a charcuterie board with frosting!

I love packaging orders for friends to pick up. How cute is that bee tissue paper?!?! πŸπŸ’›πŸ

How much time do we spend on beekeeping?

This weekend, for example:

🐝 Kent worked on winterizing the bee boxes and making sure the bees had the resources they need to survive until spring.

🌳 He and a friend took down a VERY large dead tree that was threatening to fall on our hives.

🍯 And I worked on making creamed honey for a customer who wants to give a jar to each of her guests for Thanksgiving.

Sadly, the bees in the first photo aren't moving. We are used to losing colonies during winter, but it's unusual to see them die in fall. It's always sad to open a box and see the bees all gathered around the queen, but not buzzing or moving. We not only spend a good amount of time on beekeeping, but emotional energy too! πŸπŸ’›πŸ

Our creamed honey has been extremely popular this fall. It's great on toast, crackers, yogurt, fruit or as a dip on a charcuterie tray.

But what's in it? HONEY! We mix the honey for one hour to make it creamy.

The only difference between creamed honey and regular honey is texture. There is nothing added to creamed honey to make it creamy.... there is no dairy in creamed honey.

Creamed honey might separate over time because of air bubbles in the honey. You can just stir it back together as you eat it. We have regular creamed honey and pumpkin spice. We are working on perfecting some fruit flavors, like strawberry!

"Do you keep bees in your yard?"

That's the most common question people ask us when they learn we are beekeepers. The answer is "no." Although honeybees are generally docile, they could become angry if someone knocked over a hive or it was hit by a storm.

We are thankful for dear friends who are beekeepers who let us keep our bees on their farmland. We expanded to a second location this year on another friend's property.

The bees need access to lots of pollen, as well as water. We also look for a spot that's protected from the wind, but still gets sunshine to keep them warm. In these photos from the summer, you can see the bees loaded with pollen that they are bringing back to the hive.

A lot of people ask us how long our honey will last. When you buy pure, raw honey, it doesn't ever expire. However, over time, your raw honey will naturally crystallize. This is how you know you it's real honey!

A lot of people enjoy honey in its solid state. But if you want to return it to more of a liquid, just place the jar of honey in a pan of hot water for an hour or more. (Don't use boiling water or microwave.) Honey seems to crystallize faster in cold weather or if the jar is left open. πŸπŸ―πŸ’›
