Meet the 2026 Pie Bird Culinary Retreat Creative Residents!

Thank you for your patience in our announcement, we received an absolute boatload of talented applicants. Magical humans from several continents applied and made this an incredibly hard decision. We are honored that you invested the time and effort to share your interest, thoughtful concepts, ideas and immense talent. Sadly we did not have the capacity to invite all of these bright lights to join us because that is a trip I want to be on!

We are so pleased to introduce two amazing woman…

Meet Shiv:

Shiv is Zimbabwean Irish singer, songwriter, and producer whose soulful, introspective sound blurs the lines between R&B, neo-soul, and lo-fi textures. A former DJ turned artist, she’s known for her warm, honey-toned vocals and diaristic storytelling, music described as “rich in emotion and personal insight… showcasing the depth and evolution of her artistry” (GoldenPlec).

Meet Kelly:

Kelly O’Neill is a multi talented farmer, baker, mother, storyteller, writer, and maker. Like most farmers, Kelly manages several aspects of their operations including chicken and duck flocks, weekly sold out donut drops with fresh eggs and extraordinary flavors, and writes a weekly print newsletter as the owner of Timberline Farms and Black Market Bakery.

We are delighted to welcome Shiv and Kelly to West Cork very soon and stay tuned for more about their creative pursuits and contributions during our time together in this Irish temperate rainforest.

To be connected with all so many wonderful creators through this process was thrilling, and we look forward to further collaborations and opportunities to work together. We will also be featuring many of the applicants in our stories so be sure to give them a follow💙

Esk Mountain is just 8 minutes down the road from our retreat and I was so delighted to receive a kind invitation to spend the morning there with such a special crew of other cooks, hosts, botanists, artists and other fascinating folks. Looking forward to bringing the gang here to learn about their restoration efforts, foraging knowledge and experience this otherworldly outdoor kitchen in the middle of their temperate rainforest.
Feeling grateful for the opportunities that abound in West Cork to connect, create, be inspired, have a chat, foster a collaboration and always, always learn something new. And the eating amazing food of this place. 💫🔪⛰️

A day like this on Glengarriff Bay calls for a spot on the grid. This is the ferry to Garnish Island, but I’m here for the time on the water and the sea filled me with so much simple joy, I could have stayed on this little boat all day long.
Make sure to take the Blue Pool ferry when you come ⛴️

No bake this Sunday, mostly rambles through west cork as I spend a week in Schull. It’s amazing how much walking clears my mind. Easy to forget how much there is to see.

SUNDAY BAKE - ROUNDSTONE

What: Apple galettes and jammy apricot and strawberry handpies
Who: old friends from here and there, the fisherman that first brought us to the middle of the bay to scatter my mom’s ashes, and his son that now brings me out to visit her on sunny days.

During my travels this spring and summer I decided to do a weekly bake and meditation on the week before on Sundays. I think to mark time, give myself some consistency while moving around and to bake for baking sake again. And to importantly share pie freely when I can.

People often ask my connection to Ireland. Do I give the long story or the short one? Start in 1999 when I landed on Inis Mor? or 2003 when I loaded my Mom Judy’s ashes into a backpack and set off to Roundstone to scatter her ashes and spend Christmas. My mom was only 54 when she died, one year old then me as this month. She has Irish linage and took epic trips with her sister and mother, both named Mary. I buried both of them within a year of her passing. I still haven’t watched all the videos they took of their trips, maybe I’ll do that when I return to the states…

Coming to Ireland completely changed the course of my life. It redirected my life’s work to building community ties through food and farming, and it lead to one of most consequential and lasting relationships with a friend. That friend came with a generously shared extended group of spectacular friends and family members that have always treated me as one of their own adopted brood.

Saying the Irish are ‘friendly’ never quite captured the sense of the culture of deep care I felt here. Don’t have words for it, but I am grateful for its quiet power and easy comfort for me all these 20+ years.
