This was my second "I wanna try this" project from today's rainy day. This is sweet corn ice cream, and yes, I know that sounds odd, but this is also very yummy.(recipe below)

Simple Sweet Corn Ice Cream

Makes about 1½ quarts

Ingredients

- 3 ears fresh sweet corn
- 1 can evaporated milk
- 1 whole can spray whipped cream
- ¾ cup sugar
- 1 teaspoon vanilla extract
- ½ teaspoon cinnamon
- Pinch of salt

Instructions

1. Cut the corn from the cobs, then scrape the cobs well to release the creamy corn pulp and corn milk.

2. Add the creamed corn, evaporated milk, sugar, cinnamon, and salt to a saucepan.

3. Heat over medium-low heat, stirring often, until the sugar dissolves and the mixture reaches a gentle simmer. Do not boil hard.

4. Remove from the heat and stir in the vanilla.

5. Let the mixture cool, then cover and refrigerate it overnight.

6. The next day, pour the cold corn mixture into the ice-cream maker.

7. Spray the entire can of whipped cream directly into the machine.

8. Start the machine and let it churn everything together.

9. Once thickened, transfer the ice cream to a freezer-safe container and freeze until firm enough to scoop.

I decided to make the Purple Hull Pea Jelly and I'm very pleased with the results! It tastes similar to a grape and mayhaw jelly mixed.
