First flip on our Manchego-style “Smithy” we have been making and aging wheels all summer and hope to bring this one back in the early Fall!

The first flip can sometimes be a tricky one! Our double cream Camembert “Sadie Lady” gets flipped several times by hand while draining to ensure a nice even wheel which makes growing the bloomy rind with a bit more ease 🪄🧀

We love the progression of cheesemaking so much! The milk turns into curd and before even pressing it’s already coming together to form the block of cheese 🧀 It’s like a magic trick every time ♥️🪄🪄
