🍎🧀 Apple & Brie Stuffed Chicken 🍗✨

Ingredients:
4 boneless, skinless chicken breasts
Salt and black pepper, to taste
1 teaspoon paprika
1 teaspoon garlic powder
2 tablespoons olive oil
1 tablespoon butter
For the Filling:
1 medium apple (Honeycrisp or Gala), thinly sliced
4–6 oz brie cheese, sliced (rind removed if desired)
2 cups fresh spinach
½ small onion, thinly sliced
1 teaspoon fresh thyme (or ½ teaspoon dried)
Optional Pan Sauce:
½ cup chicken broth
2 tablespoons heavy cream
½ teaspoon fresh thyme (finely chopped)
1-2 teaspoons Dijon mustard
Salt and pepper (to taste)
A pat of cold unsalted butter
Method:
Pat the chicken dry and season both sides with salt, pepper, paprika, and garlic powder.
Cut a deep pocket into each breast without cutting through.
Heat butter and 1 tablespoon olive oil in a skillet over medium heat.
Sauté onion until soft, then add spinach, half the thyme and cook just until wilted. Remove from heat.
Fill each breast with spinach mixture, apple slices, and brie. Secure if needed with toothpicks.
Heat remaining olive oil in the same skillet.
Sear chicken 4–5 minutes per side until golden.
Reduce heat, cover, and cook 6–8 minutes until done and the cheese has melted.
Optional:
Remove the chicken from the pan. Add broth, the remaining thyme, cream, and 1–2 teaspoons of Dijon mustard, seasoning with salt and pepper to taste. Simmer gently 2–3 minutes, allowing the flavors to meld. Remove the pan from heat, then whisk in a pat of cold unsalted butter—this enriches the sauce and gives it a silky, glossy finish. Spoon the sauce over the chicken before serving.
