My mom Judy has been perfecting caramel since 1989, and now I, Karli Devoe, have continued and expanded the sweet tradition. Our Sour Cream Caramel are made with a recipe we've been using for over 30 years. Each batch takes two hours to make, with constant stirring to give it a dense, ultra-creamy consistency. No rush-rush caramels here!

Hot dog, this vanilla bean paste made with Jim Beam bourbon will burn your nose hairs right off! It smells incredibly good and packs quite a punch. It will mellow out, but wow! I made it with about 12 vanilla beans and the flavor is fantastic. You use just slightly less in your recipes than you would extract, and it adds beautiful vanilla flecks to your creations.

Today I received two beautiful pounds of vanilla beans from the Semuliki Forest in western Uganda. I've got plans to make vanilla bean paste, vanilla extract, vanilla sugar, vanilla syrup, and of course I'll use them in my chocolates and desserts. It's going to be a delicious season at the Packwood Saturday Market!

I'm expecting delivery of 56 # of organic single-origin chocolate from Peru today! It's grown, harvested, and processed fully into chocolate wafers on the same plantation, cutting out middlemen, extra transportation, extra time, and ensuring a high-quality, fresh, more affordable product! I ordered 55% and 70%, and one of them is made with organic coconut sugar, the other with organic cane sugar. Both are vegan and contain only cacao, cocoa butter, and sugar.
I'm very excited! I ordered early to avoid the hassle of trying to order chocolate during the hot summer months.
