I DID IT! I smoked my own brisket for the first time ever. 15lbs with a mustard base, liberal salt and 16 mesh black pepper with a 19 hour cook time. Thank the lord I have a meat slicer at home to portion it out! I’ve also been making beef tallow and freeze dried my beef stock I made at home! Stay busy and get to cooking! 🫙🥫🍖

Make your own vanilla extract at home! 6-8 beans (looking for about 1oz worth of vanilla beans) to 1 cup or 8oz of a spirit of your choice. Vodka will work best for the purest vanilla taste. Best to let it sit for 2 months. The longer it sits, the better it gets. Get to cooking! 👨‍🍳

When all is said and done: I learned a few things through culinary school.
1. Messing up is all a part of the process. It’s better to have made a mistake and learned from it than to either make no mistakes, or make one and deny that it happened.
2. Culinary is a beautiful mixture of science and art, two of my favorite subjects.
3. Unless it’s an allergy or dietary restriction, try new foods. You’ll be surprised to find out you might gain a new appreciation for something you initially despised.
4. F**k brunch
I am on the last leg until graduating. I just have to complete my internship and I’m finished with this degree. Let’s finish this goal out strong so I can get my food truck running and create some amazing food for you all.

We’re on the final stretch with seafood being our last study of meats. And of course working with custards in advanced baking. Seared Ahi tuna with soba noodles, fried oysters, crème brûlée, cioppinno (fish stew), chocolate soufflé, and calamari with a house cocktail sauce! Thanks for looking ❤️
