Hot Spicy Pickles 🌶🥒
•Cucumbers
•chips & spears cut
•Tossed in kosher salt for one hour, rinsed thoroughly
•sanitized, heated jars packed
•brine in jars, debubbled, measured 1/2inch head space
•Rims wiped with white vinegar to ensure the seal will be good
•Sanitized & heated lids and rings placed
•Warmed gently to a rolling bubble, water bathed for 10 mins, heat removed from water for 10 mins
•Jars placed on top of towel and covered with towel to cool gradually and hopefully we have good seals 👌🏼

Now a 2 week wait for them to sit and cure and we can taste test

Picked at 3, cooked at 6.  Maybe next year we’ll be moved on to supplying our own pork chops again hopefully  🙌🏼

Gotta work on pickles this week 😬🥒
The greenhouse tomatoes are going crazy with this heat and humidity. The one on the right is a cherry tomato and it’s bigger than my better boy and beefsteak plants 😂
I cut up my first Armenian cucumber yesterday. The inside has more of a melon flavor than a normal cucumber but not much different. The flesh is more velvety so I may be peeling them, I’m not a fan of that texture 😅

Wes is the cutest thing I’ve ever grown, but here’s some other things too 😏🥰
Cucamelons, huge okra plants, crazy jalapeños, and our tree collection. We’ve got brown turkey figs, Meyer lemons, pink variegated lemons, key limes, ice cream bananas, namwa bananas and donut peaches!

Wesley even picked a few more cucumbers and wanted to deliver them to Grannys house so she can enjoy some 🥰 🥒

Wesley picked a couple of cucumbers today but we already had a few in the fridge chilling so we made some quick fridge pickles to try out. Spicy garlic dill pickles. Finally got to use some of the dill that has been growing like crazy in the garden 😂 that stuff is aggressive

Took a selfie with my favorite tomato plant and then took another selfie to show how dang humid it is 😅😅😅

I pruned some MORE stems off of my greenhouse tomatoes. They’re growing so fast in there. I like to grow my tomatoes more like trees, they really really need that air circulation and to stay far far away from soil to avoid disease and pests.

The okra and peppers are also adoring the greenhouse. When they say all these plants are heat lovers, they meant that 🥵

The rest of my trellis arches are up, I’ve got to plant the rest of my viners in the next day or so.
The cucumber patch that’s in the ground was supposed to be “spares” that looked like crap when I up potted some things earlier in the season. They’re the healthiest ones now and I’ve barely taken care of them. 🤦🏼‍♀️ the garden has a clear sense of humor.
