Ingredientes:

1/4 cucharadita ( 0,25 cucharaditas ) de goma xantana
170,1 g ( 6 onzas ) de queso mozzarella rallado
1 huevo grande
1 cucharada mantequilla derretida
Sal marina gruesa
Mostaza con miel sin azúcar , para mojar.

Instrucciones:
En un tazón mediano, bate 1/4 de taza de harina de coco, el polvo para hornear, el ajo en polvo y la goma xantana
Coloca el queso en un recipiente grande apto para microondas y cocínalo a máxima potencia en intervalos de 30 segundos hasta que esté bien derretido, de manera que se pueda mezclar fácilmente.
Añade la mezcla de harina y luego el huevo. Con una espátula de silicona, incorpora la harina y el huevo al queso, amasando la masa contra el borde del bol.
Instrucciones

Cut brie into 1/4"- to 1/2"-thick slices, making sure pieces are consistent in size. Arrange brie on a parchment-lined, microwave-safe plate, leaving enough space between each piece for spreading.
Step 2
Microwave brie until it puffs up and begins to turn golden in color, 2 to 3 minutes.
Step 3
Let brie cool until firm and crisp to the touch.

Keto Bread

This keto bread is low in carbs, high in protein and healthy fats, ideal for staying in ketosis without giving up bread.

Ingredients
1 cup almond flour
4 tablespoons coconut flour
1 teaspoon baking powder
1/2 teaspoon salt
5 large eggs
1/4 cup melted butter or coconut oil
1/4 cup water or unsweetened almond milk
1 teaspoon apple cider vinegar (optional, improves fluffiness)
Preparation
Preheat the oven to 180°C (350°F) and line a bread pan with parchment paper or lightly grease it.
Mix the dry ingredients: almond flour, coconut flour, baking powder, and salt in a large bowl.
Beat the eggs in another bowl until foamy. Add the melted butter and water or almond milk, along with the vinegar if using.
Gradually fold the dry ingredients into the wet mixture until you get a smooth dough. If the mixture is too thick, add an extra tablespoon of water or almond milk.
Pour the batter into the prepared pan and smooth the surface with a spatula.
Bake for 35-45 minutes, or until a toothpick inserted in the center comes out clean.

Keto chocolate mug muffin

In a cup, make this simple and quick keto muffin with a rich chocolate flavor. A gluten-free and dairy-free treat, ready in just 5 minutes! Don’t have a microwave? No problem, you can also bake it in the oven.

Ingredients:
4 tbsp ground almond or hazelnut flour
2 tbsp cocoa powder
4 tbsp granulated erythritol (optional)
1 tsp baking powder
½ tsp vanilla extract
2 pinches salt
2 beaten eggs
3 tbsp coconut oil or butter, melted
1 tsp coconut oil or butter for greasing the cups
14 g unsweetened dark chocolate, finely chopped (look for stevia, erythritol, or monk fruit in the ingredients).

Instructions
Microwave (7 minutes)
Mix the dry ingredients in a small bowl. Add the egg and melted coconut oil or butter. Mix until smooth.
Add the chopped chocolate and pour into two coffee mugs or two well-greased ramekins.
Microwave on full power for 1-1.5 minutes (700 watts). Remove and let cool for a minute.

Oven (20 minutes)
If you don't want to microwave, you can make these in the oven. In fact, if you have the time, we recommend doing so. Microwave capacities vary, and results will vary depending on the size of the mug.
Preheat oven to 175°C (350°F).
Mix the dry ingredients in a small bowl. Add the eggs and melted coconut oil or butter. Mix until the batter is smooth.
Place the liners in a muffin tin and fill them halfway.
Bake for about 18 minutes, or until they are springy when gently pressed in the center.
Tips
Keep in mind that the muffin will expand to double its size while baking in the microwave, then shrink. Fill the mug no more than two-thirds full.

A special occasion? Make some keto buttercream and pipe a pretty rose on top. You can also decorate with berries and whipped cream.
