After all the lovely Easter indulgence over the weekend it was time to get pumped with some new energy to create a meal that was healthy, fresh, and could lift my spirits.
My superfood dinner platter is the one that will make you swoon for some fresh, great quality salmon.
The vibrant color and the smell of the salmon effortlessly mingled with the mild yet rejuvenating fragrance of the ocean.
Whether you’re fish curious or a longtime fan of Salmon, this platter is going to delight you with it’s light citrusy notes, the mild flavor of the freshest salmon from and the accompanying salads.
I personally loved the fact that Bluehouse salmon believes in conservation through responsibly farmed salmon. A bright colored Heart-healthy fillet that won me over with its subtle taste.
Lightly scouring the skin with a sharp fillet knife helps the fish cook evenly and it gets the skin super crispy. I decided not to over flavor my salmon to bring out the natural flavors of this gorgeous fillet and the goodness of omega3 fatty acids.
I made a watercress salad with pickled radishes, sliced oranges tossed in an lemony-evo dressing. The crispy, perfectly cooked fillet is resting on a bed of complimenting super grains.
For a more filling side dish, I have made a Japanese style potato salad using the goodness of fresh boiled corn, some lovely peas, picked minced onions, rice vinegar, dijon mustard and a dash of vegan mayo.
