I have been doing a lot of Cooking is Therapy lately. This shows some of the solutions for me: no gluten, no sugar, plus extra fiber. On the plate are air fryer garlic cilantro chicken, beluga lentils, sauteed zucchini, and toasted corn tortilla. It even tastes better than it looks. Chicken: 2 chicken breasts sliced in half so that they are thinner, and pounded, then marinated for about 3 hours in 2 T. avocado oil, 5 garlic cloves minced, 1 t cumin, 2 T. white cooking wine, juice of one lime, 1/2 bunch cilantro, salt, and pepper in the refrigerator. I cooked them in the air fryer.
