Monti Verdi salumi We are farmers but also butchers, dedicated to the production of high quality cured meats made from animals that lived a happy life on pastures.

We are two Italians (Ale and Steo) that set roots in the middle of Vermont. You can come visit our farm.

Last week we cut open a pancetta from July 24. No matter how many we made over the years, it's always an exciting and thrilling moment.
Our advice (especially to chefs): please don't cook a piece of meat that has aged for so long. It would break our heart!For cooking use cubed pancetta, pork belly or bacon!!
This beauty will go in the expert hands of our friends in Florida

One of the things we are most proud of is the fact that we still tie all our meats by hand instead of using elastic netting and such. It takes a lot more work but that guarantees a better looking shape and a more uniform loss of water during aging. These are some coppa we made last February

In April 2024 we made a few pieces of loin wrapped in belly, something we never made before and that typically in Italy is made only by experienced norcini because it's a difficult piece to age right. Luckily these guys came out beautifully and here's a couple of pictures of the "lonzino pancettato" cut open.
