Congo Squares

Congo Squares Family recipe for "Congo Squares," similar to Blondies. Preheat oven to 350 degrees. Melt butter in large saucepan. Stir in brown sugar and let cool 10 minutes.

Stir eggs into the mixture. Add flour and stir. Add nuts, chocolate chips and stir. Spread into greased 9x13 pan. Bake 25-30 minutes. Cool. Cut in 2-inch squares.
2/3 cup butter or margarine
2 1/4 cups (1 lbs.) light brown sugar
2 2/3 cups self-rising flour*
3 eggs
1 cup pecans
2 1/3 cups (16 ounces) chocolate chips
* [Instead of self-rising flour, you may substitute 2 2/3 all-purpose flour, 2 1/2 teaspoons baking powder, and 1/2 teaspoon salt. Sift together.]

Thank you everyone. This is the family cookie being made for well over 60 years. Stir up in one saucepan, bake in a 9X13 pan - easy procedure and easy clean up and oh so delicious! Enjoy!

Zucchini Pita:

2 cups shredded zucchini (skin & seeds)
1/4 cup shredded onion
3/4 cup Bisquick
1/4 cup oil
3/4 cup Chunked cheese
2 eggs, slightly beaten
Dash of oregano

Mix yay together, bake in well greased baking dish at 350 degrees for about 25 min. or until slightly crusty and lightly browned. Will be very moist if not over baked. Very good!

Grandma St. Gemme's
Upside Ham Loaf:

2 cups ground ham
1 1/2 lbs. ground fresh pork
2 eggs
1 cup milk
1 cup cracker crumbs
1/2 tsp. salt
1/8 tsp. pepper
3/8 cup brown sugar
1 tsp. dry mustard
1/4 cup vinegar
10 maraschino cherries
6 pineapple slices

Mix together meat, slightly beaten eggs, milk, salt and pepper. Grease a long rectangular bread ban generously and pour the brown sugar, which has been mixed with mustard and vinegar, over the bottom. On this press 6 slices of pineapple with a cherry in the center. Spread meat mixture over this, packing place. Bake at 400 degrees for 1 1/2 hours. Turn out on platter and serve. Makes good cold sandwiches.
