My way of allowing a large amount of peaches to soften…and saving counter space…these peaches have been waiting for me since Saturday and are perfectly soft enough today Wednesday… to very easily pull off the pealing…leaving the shape of the peach

Peach Salsa

2 cups of peaches, diced and peeled (apr. 1.5 pounds)
1 cup diced unpeeled cucumber
3/4 cup diced red bell pepper
1/3 cup chopped fresh cilantro
2 Tbs fresh lime juice
2 Tbs apricot preserves
1 Tsp chopped jalepeno pepper

mix all ingredients in medium bowl. Season with salt and pepper to taste. Can be prepared up to 2 hours ahead. Cover and refrigerate. Makes about 3 cups. Enjoy!
