I’ve been pretty quiet while in Pastry school but I’m on summer vacation and I’ve tried my hand at Vegan Macarons.
This has taken me all week and many batches to see one batch of success.
I’ll be trying my recipe a few more times before I let it go live with my Summer Flavors.
If you know anyone in the Pasadena and surrounding areas that are Vegan and would like to buy some, share this post.

🥖 Bread Baking Thursday :
Soft Dinner rolls made with buckwheat & bread flour
Dill Bread 🤤 this bread has dill seeds & minced dry onion that gives it that amazing flavor profile 😍
The star of the show today was butter.
I have never made homemade butter and I was shocked to see how easy “uncultured” butter (better known as sweet cream butter in the store)is to make.
Heavy whipping cream is all you need! Over whip the butter until the liquid separates and the butter starts to get a yellow hue.
Squeeze as much liquid as you can out of it, then place in an ice bath, so it doesn’t melt, and continue to squeeze!
That’s it.
This butter will last a few days in the fridge but it won’t last that long!
Make compound butters, add the butter to your baked goods, or use to sear meats 🤤

When you’re learning about bread.. bread… bread… I’m sure you’ve all made bread at home during the pandemic, but so you understand the process or are you just following a recipe?! 🤔

Once you understand the 12 Steps to bread making, you won’t have to read the recipe for the hundredth time!

Last week we made Pita, Kiser rolls & Pullman loaves. 😍

Unfortunatelly, we are not taking any orders at this time!
I am currently in school full time for Pastry & Baking and Small Business management.
Once we are up and running again, I will post here and let everyone know!!

Keeping my Christmas Day baking energy high with some tasty cheese and meats.

Torero Matador Manchego Sheep’s milk cheese, LaClare Goat Mozzarella Cheese & Pepper jack Goat Milk cheese..

Chicken breast and prosciutto with some grain free Mediterranean grinch master crackers… had a Pomegranate I needed to eat so we will see how this goes!
