Remember grass-fed on the grill cooks in 1/3 of the time...sear and indirect finish or smoke and reverse sear are excellent. Preheat the oven to 400° then sear the steak in its own fat then pop it to the oven for 6-7 minutes for an inch + steak then immediately remove from cast iron skillet and place on cutting board to rest 6 minutes....you can invert the skillet over the steak while its resting like an igloo to keep it warm.🥩
