Le Cuvier Winery A winery dedicated to the Greater Glory of the Elliptical Society Wine Club. We produce small amounts of intensely rich wines, fermented entirely on wild yeast.

Organic and dry-farmed. Bless the Beasties! Doctrine of the Beasties: Be it known that there is firm empirical evidence to the effect that yeast & other varied wine pathogens die of boredom unless given an interesting environment within which to practice their art. This tautological proposition holds its deepest truth when sun & stone, vine & grape undergo fundamental transmutation into fine elixir via the agency of wild yeast & other similarly feral beasties, rather than through the effete & banal interaction of commercial strains of their distant freeze dried brethren, the latter being so boringly predictable. Thus, at Le Cuvier the entire process of wine making is left to the wild beasties, while all human interaction is firmly dedicated to making life interesting & nothing more. The Wine: And what does one gain from this evanescent approach to wine making? Curious synergy for one thing, but most assuredly and unequivocally, one begets rarefied wines peppered through & through with gnarly character, wines of fervor, wines which make themselves from grapes of impeccable quality
& breeding. Indulge your urbane tongue & aesthetic palate with a taste. Visit: Our hilltop location offers wondrous views of wine country & is a mere 4 miles from downtown Paso Robles.

Some of what we craft in our kitchen has traveled a little this season.
We were welcomed into an Edible Approved culinary experience. Our Ramen has found its way onto the pages of Mad Ag, while the Kefta with Muhammara now rests on the Burlap & Barrel website.

We’ve always believed a table is where w**e finds its meaning. To be welcomed to other tables, and be part of the stories, is a gift we hold gently.

With gratitude to everyone who made room for us.

Some w**es are made. Ours are waited for. 🍷

Dry-farmed vines that fight for every drop. Wild yeast we never coax, only trust. Years in neutral oak, asking nothing of the w**e but time.
Now set beside a table built with the same restraint — local purveyors, small batches, dishes designed to complement the pour rather than compete with it.
This is not an ordinary tasting menu, rather a conversation between land and hand, five courses long. It’s proof that slowness is still the rarest luxury. ⏳

This didn’t happen overnight.

Years of patience and perfecting. Of believing that a plate and a glass, done with care, can hold a whole afternoon in place.

We’ve spent a long time chasing that — and we’re not finished yet. It means so much to be named an Edible Approved Culinary Experience by Edible SLO Magazine.

Come savor the unique flavors yielded from years of practice.

In the meantime, please enjoy some of our most photogenic food creations.

The bazaar might be closed but the season has just begun. 🍇

In early August, our members wandered through The Raison d’Être Bazaar — and for one golden afternoon, Le Cuvier became a world of its own.

We built a station for every w**e to express its unique nature:

📖 Viognier — summer in a glass. Art plus Alsatian tarte flambée, mornay sauce, peach and prosciutto.
🌸 Grenache — a scent immersion built on the premise of “stop and smell the roses,” paired with bossam wraps.
🔥 Petite Sirah — live over the fire with Thomas. Sizzling kafta, muhammara sauce, warm pita — plus an invitation to paint your own watercolor masterpiece.
🍷 Le Chien Tordu, Blind Tasting — instinct put to the test. Mystery, intrigue, squid ink tempura fried cod.
🕰️ Pentimento, our solera-style w**e — proof that patience has a distinct flavor. Housemade caponata, forbidden rice, mozzarella.
🌾 Littoral, at the Vineyard Station — estate w**e and the produce that grows beside it : golden berries, hops, peppers, tomatoes. Steak frites was all it commanded.
🍑 Zinfandel — the w**e that asks why. Our raison d’être, poured into every glass we make for you. And somewhere between Shropshire blue, wild local honey, and nori — a fan-favorite pairing was born.

None of this would have been possible without a love for the craft. To our team, and to every Elliptical Society member who showed up curious — thank you for making the bazaar what it was.

This is only the beginning. The Fall 2026 Collection has arrived — and these w**es, these stories, are made for your table. 🥂

She moves as if guided by breath rather than hand, a slow swirling where light gathers and yearns to linger. Pale gold shimmers at her edges, releasing the hush of lemon blossom and the green whisper of verbena, soft as silk drawn across warm skin. Nothing rushes; everything drifts. Honeysuckle rises and fades, intimate and fleeting, leaving the impression of closeness rather than scent. Her presence unfolds in translucent layers. Lychee like cooled moonlight, Asian pear delicate and bright, each bit of ephemera touched by the quiet sweetness of water chestnuts, clean and fluid. What endures is a gentle radiance, spun fine and luminous. Made not to dazzle but to enchant: an elegance that floats, lingers, and dissolves into memory, as if the spell were never broken, only released.

Boom! Htut falls out of bed rattled by the force of distant explosions. He quickly realizes today is the day. The powerful echoes mark the beginning of the Tazaungdaing Festival. He dons his dusty ruby-red shirt and his finest suede leather pants and snatches the last bit of blood sausage for sustenance as he sprints out the door. Bean sprouts, sage, and gunpowder fill the fresh spring air, a sensory experience second only to the sea of maraschino cherry, black amber plum, and sweet orange-colored balloons painting the sky. Htut’s excitement quickly fades and is replaced by anxiousness as he watches the behemoths of fluorescent color and beauty fade into the distance. Relief sets in as he gazes upon one last tethered balloon, resonating a symphony of vibrant colors. Htut, as is his name, knows what he must do. […]

The drums of war beat as a deep guttural hymn rises to Týr, reaching far beyond the loud vociferous boastings and hushed worried undertone murmurs, as the clink and clank of horn, wood and pewter cups spill pitaya blood-red w**e upon a thirsty and envious earth. Innumerable fires sputter, pop and crackle like the interior of an angry dragon’s maw, whilst the smell of singed hair and dripping fat wafts this way and that on the swirling breeze. Roasting boar’s flesh renders, stretched precariously over licking persimmon flames, hungry as a ghost white stoat for a clutch of speckled quail eggs, as black cod hangs limp on braided line to dry, and boysenberry purple plum octopuses slowly stew in Saigon cinnamon ceramic bowls in their own Gjöll like ink, providing warmth and sustenance for the hirsute bodies wrapped in leather and fur the color and texture of dry coconut husks. Not all celebrate, however. Only the young and as of yet inexperienced, those still eager for battle. The seasoned warriors, who have marched and sailed in times before, know the cold hard truth. Not all who venture forth on raid will return, and the icy bite of life shattering steel, or goose fletched arrows, may take their last breath, before Valhalla calls and Jörmungandr devours all sight in a black nothingness, deeper, darker and more opaque than the soundless depths of the Kraken haunted North.

Nothing here is incidental. That’s the whole point.

Every detail at Le Cuvier is considered at least 10 times. The grapes, hand-tended, dry-farmed, organically grown. The w**e, aged with patience and crafted with intention. The lounge, hand-built by founder John Munch. The pairing menu, months in the making before a single plate is set.

Come taste what attention to detail looks like. 🍷

Day 𝟙 of Bottling: From Barrel to Bottle.

The rhythm of the bottling line is the heartbeat of the w**ery today. We aren’t just filling bottles; we are capturing a moment in time that encapsulates the grit of dry-farming, wild yeast fermentations and extended aging sur lie in neutral oak barrels.

For a small w**ery like ours, bottling is also a masterclass in “Cellar Tetris.” We’re spreading out every pallet and moving every barrel to make the magic happen. With 3 more bottling days in the next month and a half, the final corks will drop June 11th.

The stats:
🍷  Bottled today: ✨2022 Viognier ✨2023 Rose 2023✨Le Chien Tordu✨2023 Petite Sirah✨12th Rendition of ESR
🍷 Total case count: 702

An important first part of the journey is complete. Next stop? Your table 😉.
