What is Brix, and why are we checking it during harvest? 🍇📉
Brix (°Bx) is the official scale used to measure sugar concentration in grape juice (1° Brix = 1 gram of sugar per 100 grams of juice).
Predicting Alcohol (ABV): Sugar is what yeast converts into alcohol. Measuring Brix lets us calculate expected alcohol levels (e.g., 24° Brix roughly yields a 14% ABV wine).
Fermentation Health: Once in the tank, we track the Brix drop daily. A steady decline means healthy yeast; a stall tells us to step in immediately.
