Obligatory morning sunrise pick post! We’ve got warm temps and cloudy skies this morning in Paso Robles at our Homestead Hill Vineyard where we hand picked Cinsault. Today, August 27th is early- last year’s harvest date was October 27th! How interesting it will be to compare the ‘25 and ‘26 vintages.

Our Homestead Hill Vineyard is 23 acres in the Willow Creek Paso Robles District and it has a vacation rental too where you could sip your coffee and watch all this action! A beautiful morning over here and thank you Omar!

HONEY! 🍯 Our first batch of raw, unfiltered honey has been harvested straight from the honeycomb and is full of pollen, antioxidants, vitamins, amino acids, and enzymes. So rewarding to get gallons and gallons on our first go around! We plan to share it with our club members when they pick up their new wines.

It was about time for the annual THACHER TEAM OLYMPICS🎯💪! Last night we got together to complete winery themed relay races and celebrated by bringing an international wine and dish. We had quite the selection and so much fun! Countries represented were; Spain, Georgia, Germany, Mexico, Italy, Greece, France & South Africa.

It’s that time of year, we are harvesting our crop of premium wine grapes. We get to do it only once a year, and it’s a pretty big deal for everyone involved and tending to the vineyards all year long.

If you make and grow wine your whole career it might still only be 50 times that you’ve done it. This year marks Sherman Thacher’s 22nd consecutive harvest for his Thacher label and 32nd lifetime, and he’s still looking forward to what Mother Nature has in store to teach him this year. Anyone have any Thacher ‘04’s around?

Foot stopping grapes is a very traditional wine making practice, has been done for thousands of years and we still do it!

Trodding provides a gentle pressure that will releases the juice while keeping the seeds in tact. This way the bitter tannins don’t overpower the white wine, in this case Chenin Blanc.



6 tons of Paso Robles Chenin Blanc benefit from gentle extraction before being pressed and fermented naturally.

All feet are cleaned and sanitized- don’t worry! The high acid and eventual alcohol will also provide an inhospitable environment for bacteria.

The two estate field blends got lots of attention and many questions. It’s Pét Nat aka “bubbles” bottle day! We’ve been eagerly anticipating this Paso Robles sparker, it’s acidic and full of tart cranberry in color and on your tongue, balanced with savory undertones. The Thacher ‘25 is 77% Grenache, 23% Viognier, & 11.3% abv. It’s perfect on a hot summer night or will do very well come turkey day.

Pétillant Naturel is a little different from a traditional or méthode fermentation in that we blend in a pressure tank while the primary fermentation is still active so that carbonation is accomplished. A little trick Sherman learned from the beer world.

The label is different this vintage, the grasshopper’s eye is cutout so that the beautiful color can shine through. Label design by the talented Macy D'Attile

No added water, acids, tannin or nutrients. Crisp, clean, refreshing, low in alcohol, and hand bottled with the help of the kids home for summer. Come and get it!

Yesterday we had the privilege of being invited to pour for a lot of great people and white wine enthusiasts at the 3rd Annual White Wine Invitational.

We wanted to bring the best and brought SIX different white wines! Did you know we made that many white wines? The direct press Cinsault was very popular, many people tasted that for the first time. Take a look at the lineup.

As always we make our wines without anything but a minimal amount of sulphur added. Come by the tasting room if you couldn’t join us yesterday. Where’s my white wine emoji?

1. ‘24 Relative Strangers - an estate field blend of 11 different varietals

2. ‘23 Muscat Canelli- dry & skin contact, aged in amphorae

3. ‘24 Own Rooted Shell Creek Chenin Blanc - old vine, acidic, concrete aged

4. ‘19 Blanc de Blanc Viognier, Méthode Champenoise Hastings Ranch, almost 5 years on lees

5. ‘23 Hastings Ranch Viognier - an Adelaida District AVA staple

6. ‘24 Homestead Hill White Cinsault - an estate red grape that we pressed immediately so there is not even a hint of pink.
