L'Aventure Winery The spirit of L'Aventure is most evident in Stephan's "Paso Blends" Must be 21 years of age to follow.

Created in 1998 by Stephan Asseo, L’Aventure is a small, family-owned winery located on the west side of Paso Robles on California's Central Coast. After making wine in Bordeaux for seventeen years, Stephan wanted to create new wines representative of his new Paso “terroir.” He is deeply involved in every detail, from pruning to bottling and has become known for his Cabernet Sauvignon and Syrah blends, like the Optimus and the Estate Cuvee.

A beautiful evening at the table with family, friends, and unforgettable pairings at S’Arañella. Thanks to their incredible team, the night came together seamlessly, each course thoughtfully prepared and perfectly paired alongside L’Aventure wines and Thiénot Champagne.

Behind the blends 🍷
 
Stephan, Chloé, and the winemaking team recently welcomed the Thiénot team to the winery for a week dedicated to one of the most important steps in our winemaking process: blind tasting.
 
With past vintages in mind, the team created a range of blends for each cuvée. Through a series of blind tastings, the wines were analyzed, ranked, and discussed together until a final consensus was reached and the 2025 cuvées were defined.
 
The 2025 vintage, now complete, shows incredible elegance, texture, complexity, and depth. We can’t wait to share it with you.

The whole IS greater than the sum of its parts.

Last week, our team gathered to taste a wine in its individual components, each portion aged separately in French Oak, 1-Year French Oak, Concrete, and Amphora.

Same wine. Four vessels. Four completely different expressions.

Tasting them side by side is more than an exercise, it’s education. It deepens our understanding of how every decision in the cellar influences what ends up in your glass. And when these elements are blended together? Balance. Complexity. Harmony. 🍷

A reminder that great wines, much like great teams, are built from many distinct parts working as one.

Tasting Room Syrah? 

Last week, Dave (our vineyard manager of over 20 years) invited our tasting room team into the vineyard for a different kind of education. Each tasting room host was given two bays of Syrah to tend to all the way through harvest, starting with pruning. 
 
This isn’t a lesson from the sidelines. It’s hands in the dirt and real decisions across the growing season, mirroring the same thoughtful, vine-by-vine approach used throughout the L’Aventure Estate… just without the decades of experience and deep knowledge of the land. 😂

Colors of Harvest: Harvest Moon



Under the light of the Harvest Moon, the vineyard takes on a different kind of glow. Silvers and blues stretch across the rows as our crew works steadily through the night.



This year, the timing lined up just right, the grapes were ready, and the full moon rose above the vineyard. A quiet reminder that nature always sets the pace.

Each year, our team gathers to pick a small block of Viognier, the first fruit of the vintage. A symbolic gesture that marks the start of harvest, and the palette of colors to come.

Yesterday we got to taste through the 2023 vintage with Stephan… and maybe got in a little trouble for chatting too much 😅. Hard to stay quiet when every sip sparks so much excitement!

The wines are showing pleasure, balance, and pure joy; we cannot wait to share them with our members this fall!
