Most commercial coffee is harvested by machine. Machines don't distinguish between a perfectly ripe cherry and one that's not ready. They take everything.

At Finca Perijá — the single-estate farm in Colombia where Rock Top Coffee sources our beans — the coffee is hand-picked. Skilled workers move through the crop selecting only the cherries at peak ripeness. At 1,500 meters elevation, the Tabi, Cenicafé, and Castillo cultivars develop slowly in the cool mountain air — and that's part of how you get Citrus, Cashew, and Caramel notes. Green coffee sitting in a warehouse for two or three years loses the brightness and complexity that makes specialty coffee worth drinking. Latte art isn't a gimmick. It's a signal.

When a barista takes the time to pour a rosette or a tulip, it tells you something about the shop — that they care about the details, that the person behind the bar has put in the hours, that the coffee going into that cup was worth the effort.

That signal only holds if the coffee underneath the foam is worth it. Great milk technique on a mediocre bean is theater. A great pour on a great espresso is a morning someone remembers.
