You had us at , American Association of Meat Processors. Looking forward to seeing the competition happen in Milwaukee: the Home of the Brat Fry.

The American Cured Meat Championships are always one of the highlights of our annual AAMP Convention. This year's event in Milwaukee should have a huge turnout, and we're looking forward to seeing (and tasting) the quality products that our members will be submitting! This year's state conventions crowned some deserving champions at their own meat competitions, and we hope that many of those grand champions will come to Milwaukee and submit those products in the ACMC as well. Don't forget that this year's fresh product class is bratwurst. We couldn't think of a more appropriate category for a meat products show in Milwaukee.

Where will you be one month from today?

On July 9, our team will be in Milwaukee, Wisconsin, for the 87th annual American Association of Meat Processors Convention.
We are a proud supporter and sponsor of the opening event on Thursday evening, July 9, and of the American Cured Meat Championships, which conclude with an award ceremony on Saturday, July 11.

There’s a lot of activity surrounding our new R&D Center and Meat Processing Kitchen this week:

✅ Parking lot and front sidewalk are complete and striped
✅ Exterior doors are being installed
✅ Interior door frames are being set
✅ Drywall, ductwork, sprinkler piping, and wall framing are all underway.

More visible progress is expected in the coming weeks, and we're still on track for a September move-in date.

A big thanks to everyone helping bring this project to life.

We fired up the smoker for an unforgettable company cookout at Excalibur in mid-May, with our sales team stepping up as grill masters for the event.
Our team delivered some incredible flavors, using Cajun Smokehouse BBQ and Butter Garlic seasonings on the pulled pork and Better Burger on the patties. The crowd favorite was the pulled pork, slow-cooked for 12 hours until it was perfectly tender and falling apart. Employees enjoyed nearly 100 pounds of the protein, topping it off with The Bearded Butchers BBQ sauces for an extra kick.
It was a one-time lunch event with plenty of leftovers for the second shift. Many thanks to Miller Scales & Food Machines for lending us their Southern Pride BBQ Smoker, which handled the 14-pork shoulders like a champ!

Ultimate Steak & Roast Rub - We use this rub regularly on grilled steak. It's an excellent blend of spices, especially the mustard, which gives a surprising kick. The bold profile really enhances the flavor of beef, hamburger, and vegetables.
