We have read many concerns on social media about how food establishments can be opened with the current boil water notice and employees home situations. DBPR has called and checked up on food establishments. We asked and they said although we have a filter on our tap, this wasn't sufficient and still need boiled water. So, this is how WE can open and keep OUR customers safe:
1. Early in the morning, we drive all over the place looking for bagged ice. Not from the self-served big machines because that is connected to tap. We visit several stores hoping one of them has ice delivered.
2. The water we use for drinks comes from a hot water dispenser which is always at boiling temp.
3. Our coffee machine is not hooked up to tap and we have to manually refill with boiled water. So we can serve delicious coffee from locally sourced coffee roasters safely!
4. We manually wash our dishes and use the three-sink method. Last one is chemically sanitized and approved by DBPR aka health department.
5. We asked our employees who want to work and are able to come in. Some weren't and others were. The well-being of our employees is priority as they must be safe first before they can serve our customers safely.
We are a small family business and have to be more cautious of our actions as we have invested everything in this business. We follow rules because one mistake can cost us a lot. Being unable to operate for a few days, cost us a lot. So, we follow rules.
Please be safe everyone!
