Every follow, like, comment, and share has helped fuel our journey to create something truly special: a California-grown agave spirit built from the ground up, seed to bottle.

We’re excited to share that our first small-batch release is planned for next year. While the agave continues to grow and mature, we’re committed to doing things the right way—patiently, sustainably, and with respect for the craft.

This is more than a spirit. It’s a dream rooted in California soil.

Most agave used for spirits are propagated through pups (hijuelos), creating genetic copies of the mother plant. Growing from quiote-produced seed is different—it preserves genetic diversity and allows each plant to develop its own unique characteristics.

At Azulito Agave Spirits, we’re not just growing agave; we’re cultivating the future of California agave heritage.

Every plant tells a story. This one began when a mature Blue Weber sent up its towering quiote, completed its life cycle, and left behind seeds for the next generation. Two years later, it’s thriving and steadily working its way toward becoming part of something special.

What looks like weeds is really competition: water, nutrients, sunlight. If you don’t manage it, it manages you. So this becomes part of the ritual… walking the rows, opening up space around each agave so it can breathe, grow, and mature the right way.
