Learning As We Grow

There’s no perfect playbook for growing agave in Californian especially for new farmers.

We’re learning as we go, irrigation, studying the soil, watching how different plants respond to the heat and cold, adjusting spacing, and figuring out what to do with the gophers

Some things work. Some don’t. Every day teaches us something new.

That’s part of what makes this journey so exciting. We’re learning what it means to grow great agave right here in California.

Planting Blue Weber agave is easy.

Knowing its lineage is different.

Where did the mother agave come from?
Was she healthy and vigorous?
What characteristics did she pass down?
How many generations has that line been propagated?

Every hijuelo starts with a mother plant—and those genetics can influence the next generation of your field.

That’s why we believe a serious agave program begins before the agave ever goes into the ground.

We want to know our mother plants.
We want to know their lineage.
And we want to select the strongest plants to propagate forward.

Because when you’re growing a crop that can spend years in the ground, the genetics you plant today can shape your fields for generations.

Today I took the Polaris down the aisles of our Espadín agave field and couldn’t help but feel grateful. Every plant represents patience, faith, and a vision that started with a handful of agaves in the ground. Watching these rows grow under the California sun reminds me that great things take time.

Agriculture teaches humility. Some days are challenging, but days like today make it all worth it. Looking across the field, I see more than agave—I see the future of California-grown agave spirits, the hard work of family and friends, and the opportunity to build something lasting from the ground up.

One row at a time. One plant at a time. One day at a time.

Grateful for the journey, grateful for the land, and grateful for everyone following along as we grow. 💙🌵

This little Agave shawii has officially graduated from the greenhouse and found its new home in the California soil.

Grown from seed under protected greenhouse conditions, it has now been transplanted into the field where it will face the elements, develop deeper roots, and continue its journey toward maturity. Native to the coastal regions of Southern California and Baja California, Shawii is one of the most iconic and resilient agaves in North America.

At Azulito Agave Spirits, we believe every agave has a story. While our Blue Weber agaves are destined for future spirits production, our Shawii plantings help preserve and showcase California’s rich agave heritage.

This is just the beginning. Over the coming years, we’ll document its growth, resilience, and adaptation to our Perris, California ranch.

We’re excited to share that our first small-batch release is planned for next year. While the agave continues to grow and mature, we’re committed to doing things the right way—patiently, sustainably, and with respect for the craft.

This is more than a spirit. It’s a dream rooted in California soil.
