Who said salads can't be a great choice for lunch! Look at these amazing options, Chicken Italiano, Grilled Veggie and a Cobb Salad. Each of the salads are served on a mixture of iceberg and Romaine lettuce. You can pick your dressings but I recommend Italian, Red or Balsamic Vinaigrettes and Ranch. The package price includes Dinner Rolls, there are other salads to choose from.

The soup of the day is Mexican Style Corn Chowder. This soup is very hardy, full of veggies with a creamy broth. The soup starts out by cooking up some diced smoky bacon, onions and garlic until they are golden brown. Then a few tablespoons of flour goes in to create a roux to help thicken the soup. After cooking out the rawness of the flour, the chicken broth and milk is poured in, while you continuously stir to prevent lumps. Once the creamy broth has come to a simmer, the corn, black beans, diced potatoes and tomatoes with green chilies are added. The soup is seasoning with cilantro, seasoned salt, black pepper, chili powder, cumin, cayenne and hot Hungarian paprika. Right before finishing the cooking stir in a few scallops of sour cream and a Mexican mixed cheese to add even more richness and flavor. Now bring it back to a simmer and it is ready to serve! You can sever it as is (like pictured) or top it with additional sour cream, cheese and cilantro. All that is left is to enjoy!!!

When you have a craving for Italian food, this is the perfect meal to enjoy. Spicy Italian Sausage and Cheese Lasagna Rollups make a great family dinner for any night of the week. It takes a few steps to make all the components but it is totally worth it in the end. The sausage is a mixture of crumbled Italian sausage that is sauteed with diced onions, garlic and season with black pepper and red chili flakes. Now for the cheese layer, mix together Ricotta cheese, parmesan cheese, mozzarella cheese, a couple eggs and season with black pepper, garlic powder and oregano. Time to roll.... on a board put down some aldente lasagna noodles, then spread on the cheese mixture, add on the crumbled sausage, top with more mozzarella cheese and roll it up. Place the rolls in a pan that has a bed of sauce in it. Once all the rolls are done top them with more sauce, Mozzarella cheese, parmesan cheese and bake until golden brown and bubbly. When you take them out of the oven let them sit for a bit to make it easier to serve, by doing this the roll will stay together better when to remove them from the pan. They are best served with a side salad, some crusty bread and a glass of wine. Enjoy!!

This is a pasta dish that I think of when I want something lighter and full of flavor, it is my Spicy Sausage and Kale Rigatoni! The spice starts off with sauteeing slices of spicy Italian sausage until slightly golden brown. Once they have browned and removed from the pan, diced onions, garlic and chopped kale are added with and good seasoning of salt, pepper and chili garlic sauce. As the vegetables wilt down and caramelize, the pan is deglazed with white wine and butter is mixed in to create a light sauce to coat the rigatoni pasta that completes the dish. When I am ready to serve it up I like to top it with some parmesan cheese. This is a great simple pasta that comes together quick!

Today let's elevate leftovers! If you are like me after a Taco Tuesday you always have some leftover taco meat, so what do you do with it after your family is tacoed out? I like to turn it into a Taco Mac and Cheese!! I pull the taco meat out of the fridge and slightly warm it in the microwave, just to loosen it up a bit. In a pot I sautee diced onions and garlic that are seasoned with black pepper, some additional taco seasoning and hot Hungarian paprika. After the onions have softened and the seasoning mixture is toasted, add in your taco meat, tomatoes with green chilies and cheese sauce, allow it to simmer for a few minutes. Time for the elbow macaroni to go in, give it a good stir and you are ready to eat. I like to top it with some shredded cheese and a dollop of sour cream. I guarentee your family will not have any idea that it was make with leftovers!

When it is cold outside but you want a taste of Summer you make barbecue! Today we are having Bacon Wrapped BBQ Chicken Tenders. I have taken chicken tenders and seasoned them with seasoned salt, pepper, garlic powder, and hot Hungarian paprika before coating them with BBQ sauce. Next, each chicken tender is wrapped with a slice of bacon, placed on a sheet pan and baked until they are cooked through. But what makes these tenders even more delicious is at the end, they are recoated with more BBQ sauce and broiled to crisp up the bacon and to make the sauce caramelized and sticky. In the Summer these can be cooked on the grill for an added smokey flavor. Time to eat!!

One pan Skillet Chicken Fajitas are great and can be served in many different ways to please even the picky eaters in your family. Diced chicken beasts pieces are seasoned with a blend of salt, pepper, chili powder, cumin, garlic, red pepper flakes and hot Hungarian paprika and then seared in a hot skillet both to create a golden crust on the outside of the pieces but to also keep the chicken juicy on the inside. Once cooked through they are removed from the pan and jalapenos, onions, a mix of red and green peppers are sauteed in the same seasoned pan until crispy tender. Now the cooked chicken is added back in and tossed to combine and marry the favors together. After a few minutes there are ready to serve and the possibilities are endless. You can put the mixture into a tortilla and top with cheese, sour cream and guacamole, put the chicken over a bed of rice and top with sour cream and salsa or dice up some of the mixture up and layer it on large tortillas with cheese and make quesadillas. Are you ready for a pan of it today? Let's enjoy!!!

These BBQ Braised Country Style Spareribs are made in the oven, so you are able to fill your BBQ craving anytime of the year. The Spareribs are seasoned very simply with seasoned salt and pepper because the sauce will fully flavor the ribs during the braise. Each piece is seared on all sides and removed from the pan (remember depending on how many you are cooking you will have to do them in batches, if not they will steam and not brown). Now let's make the BBQ that the ribs will braise in... it all starts off with bacon (that right pork on pork). The bacon is cooked until slightly crisp before added in slices of onions and garlic, which continues to cook until translucent and caramelized. The pot is deglazed with an amber beer, then your favorite BBQ sauce (Sweet Baby Ray's) and hot sauce (Franks) are added and brought to a simmer. Now nestle in the seared ribs, coating each piece in the sauce, cover and bake low and slow for a couple hours. Right before they come out of the oven I like to put them under the broiler to crisp them up a bit. They come out with a slight crispy exterior but are still fall off the bone tender and super moist. Add your favorite side dish (buttered noodles in my case) and dig in. You will not be able to resist going for seconds!! Enjoy BBQ indoors tonight!!

Beef Barley Mushroom Soup is on the table for dinner tonight. This hot, hardy soup will warm you right up on this cold Halloween night. Let's get started with the beef, I like to use chuck that is cut up into bit size pieces (the cut is smaller then what I would normally use for stew) they are coated with seasoned salt and black pepper and go into the pot with some oil to get a quick sear. They are removed with all their juices to a bowl and I add a touch more oil to the pot to saute the onions, carrots, celery, mushrooms and garlic until the are slightly softened. The veggies are seasoned with seasoned salt and black pepper, as they continue to cook a good squeeze of tomato paste goes in and allowed to cook to develop its flavor. After the dry barley is added, I let it toast a bit before pouring in beef broth and the beef pieces and their juices. This soup will simmer for a couple hour to soften the beef and for the barley to bloom, open and become tender but still toothsome. As the barley softens it will help thicken the broth and it will be slightly creamy. It is now ready to eat with a chunk of bread for dunking. Enjoy it for dinner tonight and it makes great leftovers for lunch tomorrow with a sandwich.
