Boyd Morrison, Sonoma and Medocino Technical Representative, will be discussing fermentation enzymes and how they can help optimize red wine production during harvest.
Topics will include:
-When and why to use fermentation enzymes,
-Differences between Lafase HE Grand Cru and Lafase Fruit,
-Color extraction and stability, mouthfeel and tannin integration, fruit expression, and
-Best practices for incorporating enzymes into a winemaking program.
As a bonus, attendees can experience firsthand the differences between wines treated with HE Grand Cru and Lafase Fruit; aka - there will be a guided tasting of trial wines!
