Happy New Year from our little clan! We ushered in the new year with a trip out to Big Bend. Open skies, mountain hiking and starry nights were good for us. We’ve been pretty quiet in this little space but the farming and ranching is full speed ahead. Praying you all had a blessed Christmas season!

Easy week night meal, Beef Stroganoff! I usually make meatballs followed by the sauce but this time I browned the meat then put sauce ingredients right in with the meat. Once the sauce was thickened, I stirred in the pasta. Easy peasy and tasty!

Our ground beef is vacuum sealed in flat 1lb packages which makes for very fast thawing.
We fly through it for that reason and of course how tasty and versatile it is!
