All you need is:

Fresh watermelon
Mini cucumber
Reduced fat feta
Fresh basil
Blueberries
Zero sugar honey

Mix it all together in a bowl.

How about a DELICIOUS high protein, no carb, low cal dinner? Ya know that’s what I’m all about 😁 This is, hands down, one of the tastiest and easiest meals I have ever made! Feel sad you can’t have the bun? Don’t. Prepare it like it is its own gourmet plate and there will be no feelings of deprivation 😁

You will need for one serving:
95% lean ground beef - 8 ounces
Mushrooms sliced - however many you want
White onion sliced - however much you want
Swiss or Reduced fat mozzarella cheese - 1/4 cup
Sea Salt
Pepper
Garlic Salt or Powder
Avocado oil
Egg - 1

Sauté the mushrooms and onions in a non stick pan with some avocado spray. Season. Cook to your liking. I like mine VERY toasty. While that’s cooking shape your ground beef into a hamburger patty and season on both sides. I just used the same pan for less clean up to cook it in. Cook the burger to your liking of doneness. Once the burger is cooked, top with most of the cheese and melt. I use a lid to cover mine and trap the heat for melting. Remove the veggies and set aside. Same pan, a little more spray and cook your egg over easy. Burger first, top with the egg, then cover with the veggies. Sprinkle remaining cheese on top.

Enjoy!! SO good and filling!!

I did not use any condiments on this but if you do, make sure you tread lightly on it. Use a reduced fat mayo or a Dijon mustard to keep the fats in check. For me, the egg and melted cheese served the gooey texture I wanted 😁

Want to make a delicious sweet balsamic dressing that’s perfect for a summer salad that’s also low in calories? Want something fast, easy, delicious, and loaded with all the right macros? How about this plate sized omelet with nearly 50 grams of protein, just under 400 calories, and next to no carbs?! Oh man....SO good!

You will need:
Avocado Spray
Mushrooms chopped - however many you want
Red onion chopped - however many you want
Cherry tomatoes halved - however many you want
Egg Whites - 1 cup
2% Low Fat Cottage Cheese - 1/2 cup
Reduced Fat Mozzarella shredded cheese - 1/4 cup
Sea Salt - seasoning to taste
Pepper - seasoning to taste
Garlic Salt - seasoning to taste

In a non-stick pan sprayed lightly with avocado spray on medium high heat, sauté your seasoned veggies to a nice golden brown. While those are cooking, mix your egg whites and cottage cheese in a bowl and add more seasoning to that mixture. Once the veggies are done, remove from the pan set aside in a bowl. Leave the heat on medium high. Spray the pan lightly again with avocado spray and pour in your egg mixture. Make sure you have a nice big spatula to flip it over once it gets golden and once flipped, put in the veggies and cover with mozzarella. Fold over one side to create an omelet. Flip over to cook the other side. Enjoy!

Feel free to add a little light sour cream or salsa on top. Maybe some cilantro. I'm always a fan :)

Oh man this is a good one! So fast and easy and DELICIOUS!!

Cheeseburger tacos!

The key to getting completely stuffed with a lower calorie count is all about what you’re building it with. I use these zero carb 60 calorie tortillas, 95% lean beef, reduced fat cheese, and this amazing zero sugar (all natural) ketsup from Yo Mama.

Use a griddle because these things are huge. Preheat to 325 degrees and spray lightly with avocado spray. In a bowl combine around 6-8 ounces of beef with seasonings of your choice. I kept it simple with salt, pepper, and garlic powder. Spread out into a thin layer on the tortilla and place face down on the griddle. I decided to add a little extra protein and added an over easy fried egg to one of mine-just cooked it right on the griddle with the tacos. Plus, I love eggs on burgers, call me a weirdo 😁 Cook around 3 minutes then flip to allow the bottom half to cook which will cook the beef on the other side as well. Then load these up like you would your burger (being mindful of the condiments). I added shredded lettuce, reduced fat mozzarella but use whatever cheese you want if it’s more about carbs for you, a pickle slice, and your condiments. Fold up like a taco and enjoy!!

Seriously. Soooo good and they took 10 minutes to make as well as super easy clean up!

I decided to give the pressure cooker a break tonight 😁 Instead, I wanted to share this super easy meal with you to show you an example of a nutritious and high volume meal that just with some simple substitutes can drastically lower the calories AND keep you full.

Tacos! I’m a Texas girl, y’all, and around here, tacos are a literal food group. And queso. But that’s for another day 😁

Subs:
95% lean ground beef instead of full fat
Light sour cream instead of full fat
Reduced fat mozzarella cheese instead of full fat
Most important - These ZERO carb tortillas that I am obsessed with!

Two of these ginormous tacos without those subs, easily over 1000 calories, closer to 1200 probably. These two tacos, 550 calories!!

I’m stuffed. They were amazing 😍 Mission accomplished.

Load up on the next to zero calorie stuff like tomatoes, lettuce, this soooo good cilantro lime sauce, more cilantro. Yummmmm. Enjoy!!

I’m just a littttttle obsessed with my pressure cooker ❤️ This 3 pound slab of waygu roast took one hour. One. Hour. Juicy, falling apart tender. O.M.G.

Tips for the juiciest most tender cook:
- Marinate the meat for at least an hour or overnight in lemon juice and olive oil and seasonings of your choice.
- Allow the meat to become room temperature before cooking.
- Sear the meat on both sides around 3 minutes per side. This helps to lock in the moisture.

I know, I’m pressure cooker crazy right now lol…but man, it’s freakin magic!! ❤️

So I HAD to try my pressure cooker with veggies and salmon. I’m not a huge fan of steamed veggies but I wanted to see how the cook turned out mostly on the salmon.

Guys, gals, all of you out there: Hear me please. If you do not like to cook or the clean up, GET ONE OF THESE ASAP. You do not have to be a great cook either, just thrown that s**t in there and go!

With that said, this entire meal with prep, cook, AND clean up (because I always clean as I go then final clean before I eat while it cools)…drumroll…15 minutes 😳

The result, this bowl of deliciousness. In the pressure cooker, 5 minutes. That salmon was falling apart! That’s why it’s not so pretty lol…

What I love the most about this is the time saved.

For this meal, I put it on the sauté function and put some avocado oil, garlic, zero sugar maple syrup, and a little water (a tiny bit). Cooked that down then threw in my veggies seasoned with sea salt, pepper, paprika, and garlic powder, put the salmon on top that I seasoned with sea salt, pepper, and a drizzle of zero sugar honey. Then I just threw in some fresh dill. Put it on the cook function for 5 minutes. Top with a little crushed red pepper cause I loooove that sweet and spicy flavor ❤️

Seriously, so so so good ❤️

Sometimes a light dinner is in order. Mostly after a heavier lunch 😁 This is my favorite fast, easy, delicious thing to make when I need a meal lighter in the calories and fats. Roasted veggies!

Whatever veggies you want but tonight I chose: squash, zucchini, cauliflower, broccoli, shallots, and brussel sprouts. Spray with avocado spray and season with sea salt, cracked pepper, garlic powder, onion powder, and paprika. Put in the air fryer at 380 degrees for about 15 minutes. At about 13 minutes, pull out and spray a little more avocado spray, add some balsamic glaze, and top with reduced fat feta cheese. Mix that up and cook the remaining 2 minutes. It is heaven on a plate! Or in this case, heaven in a bowl 😁❤️
