We recommend a ground beef to fat ratio of atleast 70/30 when you purchase a Wagyu beef.

We shoot for an 80/20 in the retail shop, but it would be difficult to knock all the marbles out of a well finished beast like this- without sacrificing good product.

Recently Nichols Ranching Co. has been focused on sharing its cowboy lifestyle to others here on social media, including photos and videos of the cattle and our horses, along with the daily interactions where we use our working cow dogs in the day-to-day ranch operations. Nichols Ranching Co. is a family-owned agricultural business based out of Sherman, Texas with properties that will include Celina, Saint Jo and Iredell, Texas as well. We specialize in Wagyu cattle. Our ranch, owned by Cade D. Nichols, a fifth-generation Texan, has been experimenting with Wagyu cattle for over 17 years and has developed a diversified revenue stream through registered seed stock, bull sales and leases and a buyback program for the calf crops. Our hands on, day to day operations falls under our ranch manager, Bryce Renfro, who also takes on most task of ranch foreman as well, who's ranching experience of 25 plus years has been highly beneficial to the success of our ranching business. Our business model enables commercial cattle producers to benefit from incorporating Wagyu genetics into their own operations.

Both Cade, as well as our employees who round out and complete the Nichols Ranching Co. family, all value their ranching heritages, hence the sharing of updates and media on our page about the daily workings here on the ranch. We try to showcase not only the hard work and the dedication that goes into maintaining the ranch but also to share out the select moments of life where fun overlaps work with our friends and family.

U.S. CATTLE REPORT 🏆 Feedlot Leverage Index Surges To Record Levels As 5-Area Steer Prices Set Record Highs Compared To Flat Boxed Beef 🏆

The 5-Area steer price surged to a new all-time high of $264.96 on Friday, climbing $18.97 in just 21 days from $245.99 on 4/24. During that same stretch, boxed beef values remained relatively flat, trading in a narrow range between a low of $387.00 on 4/24 and a high of $392.34 on 5/5 before ending Friday at $389.25. While boxed beef moved only $5.34 from low to high during the period, the cash fed cattle market exploded higher, pushing the Feedlot Leverage Index to record levels at 68.07% on Friday as feedlots captured a rapidly growing share of wholesale beef value.

U.S. CATTLE REPORT 📦 Early-Year Boxed Beef Rally Gives Way to Mostly Flat-to-Lower Trade Since March — Still Highest May Prices on Record Outside of COVID 📈🐂

Choice boxed beef started 2026 at $349.97 on January 2 before rallying steadily through January and February. The market pushed above $400 in mid-March and remained over the $400 mark for five consecutive sessions from 3/16 through 3/20, peaking at $403.31 on March 17 — the highest price so far in 2026. Since then, boxed beef values have trended lower and mostly sideways, finishing at $389.25 on May 15, still nearly $40 above where the market started the year.

Compared to prior years, boxed beef continues to trade at historically strong levels, though still below the major rallies seen in 2025 and 2020. Last year, Choice boxed beef was $349.90 on May 15, with the highest May 2025 value reaching $366.34 on May 30. However, 2025 featured the longest streak of $400-plus boxed beef values in U.S. history, holding above $400 for 20 consecutive sessions from 8/15 through 9/12 and peaking at $416.01 — the highest non-COVID price on record. During the COVID-driven rally in 2020, Choice boxed beef moved above $400 on 5/4 and stayed there through 5/21, peaking at an all-time record high of $475.39.

U.S. CATTLE REPORT 🌎🥩 China Leads Global Beef Imports as U.S. Loses Ground in Largest Market

China was the world’s largest beef importer in 2025 at 8.06 billion pounds, followed by the United States at 5.47 billion pounds. Together, China and the U.S. account for more than half of all global beef imports, highlighting the massive role both countries play in the global beef trade. Japan ranked third at 1.53 billion pounds, followed by South Korea at 1.29 billion pounds and the European Union at 1.02 billion pounds.

China had become one of the largest buyers of U.S. beef in recent years, ranking as the third-largest importer of U.S. beef in 2024. However, purchases have sharply declined in 2026. Through March, China has imported just 5 million pounds of U.S. beef this year, with imports down 96% from the same period a year ago.

According to Reuters, export licenses for hundreds of U.S. beef plants that had recently been renewed after a year-plus hiatus are now listed as expired on the website of China’s General Administration of Customs. Reuters also reported that China’s customs agency did not immediately respond to questions regarding why the licenses had changed to expired status.
