Cool Summer Dessert Alert! 2-Ingredient Soymilk Warabi Mochi💫

Craving a traditional Japanese dessert but missing complex ingredients?
This Soymilk Warabi Mochi comes together with just 2 ingredients in under 10 minutes! No complicated steps, completely plant-based, and ridiculously wiggle jiggley~ 🤤

Ingredients:
400 ml Unsweetened Soymilk
40g Potato Starch

Homemade Kuromitsu (Black Sugar Syrup):
150g Brown Sugar (or Muscovado Sugar)
150ml Hot water
15g Honey
3g Salt

🍵 Topping & Dip Ideas:
The Classics: Toasted Soybean Powder (Kinako), Green Tea / Matcha Powder
Taiwanese Flavor Upgrade: Sweetened Peanut Powder
Creative Twist: Black Sesame Powder, Unsweetened Cocoa Powder
Drizzle & Syrups: Kuromitsu (Black Sugar Syrup), Condensed Milk, Maple Syrup

Syrup Prep:
Combine brown sugar and water (1:1 ratio) in a small saucepan over medium-low heat.

Bring to a gentle simmer for 3–5 minutes until the sugar fully dissolves and thickens slightly (it will become thicker as it cools).

Remove from heat and let cool before drizzling over your chilled warabi mochi!

Warabi Mochi Prep:
Combine the soymilk and potato starch in a pot.

Whisk thoroughly before turning on the heat until completely smooth.

Pour the hot dough into a glass container. Place the container directly into a deep bowl filled with ice water to rapidly and completely cool it down.

Then, refrigerate for 3–5 hours to let it set and hold its shape completely.

Once thoroughly chilled, slice the warabi mochi into bite-sized pieces, coat them in your favorite powders (kinako, green tea, or peanut powder), and enjoy!

🌟 Pro-Tips:
Keep stirring constantly while heating to prevent lumps or burning at the bottom.
Potato starch gives this a silky, soft-chewy texture—best enjoyed fresh!

💡 Chef's Pro Tips
Coarse Sweet Potato Starch vs. Cornstarch: Coarse sweet potato starch gives the authentic, crunchy, pebbled crust characteristic of Taiwanese night-market street food.

Air Fryer Alternative: Spray-coat tofu thoroughly with cooking oil and air fry at 200°C (400°F) for 12–15 minutes, tossing halfway through.
