Nettles Tea 🍵🌿✨

Fresh, simple, and made straight from nature! Nettles tea has been enjoyed for generations and is an easy way to use fresh stinging nettles. With just a few steps, you’ll have a warm, earthy tea that’s perfect for sipping any time of day!

Ingredients 🛒

Fresh nettles (young shoots, under 6 inches tall)
Water
Optional add-ins: 🍯 Honey, 🍋 lemon, 🌿 fresh mint

Instructions 👩‍🍳

Harvest young nettles that are under 6 inches tall.
Rinse the nettle leaves thoroughly (using gloves).
Add the nettles to a pot of water.
Bring the water to a boil over high heat.
Once the tea develops a green-yellow color, turn off the heat.(An alternative is to bring the water to a boil with the nettles, turn off the heat immediately, cover the pot, and let cool.)
Remove most of the nettle leaves.
Strain the tea into a jar or mug.
Enjoy warm or let cool before serving.

💡Tip: Always harvest nettles from areas free of pesticides or contaminants, and away from roads, and handle fresh nettles with gloves, since they sting before they’re cooked or steeps.

Burrito Bowl Chicken 🌶️🔥🍗

Bold, smoky, and packed with flavor. This fajita chicken is an easy meal-prep favorite that can be used in tacos, burrito bowls, salads, wraps, or enjoyed on its own! The combination of chipotle peppers, lime, and warm spices creates the perfect balance of heat and flavor.

Ingredients 🛒
Chicken thighs
2 chipotle peppers, diced
2 scoops adobo sauce
Juice of ½ lime
Garlic powder
Oregano
Chili powder
Cumin
1 orange bell pepper, diced
1 yellow bell pepper, diced
1 onion, diced
Corn from 1 cob
Avocado oil

Instructions 👩‍🍳
Dice the chipotle peppers and add them to a bowl.
Add adobo sauce, lime juice, garlic powder, oregano, chili powder, and cumin.
Mix well to create the marinade.
Add chicken thighs and coat evenly in the sauce.
Dice the orange pepper, yellow pepper, onion, and remove corn from the cob in a separate bowl.
Place chicken thighs on a parchment-lined baking sheet and spoon any remaining sauce over the top.
Air fry at 400°F for 20 minutes.
While the chicken cooks, add a small amount of avocado oil to a skillet or saucepan.
Add the peppers, onion, and corn.
Sprinkle with chili powder and stir.
Cook over low to medium heat until vegetables reach your desired tenderness.
Check that the chicken reaches an internal temperature of 165°F or higher.

Crispy Orange Roughy

Ingredients 🛒
Orange roughy filets
Eggs
Panko breadcrumbs
Garlic powder
Fresh herbs (parsely, thyme, basil, or your favorites)

Instructions 👩‍🍳
Preheat air fryer for 400°F
Prepare an egg wash by mixing eggs in a bowl
In another bowl, mix panko bread crumbs, garlic, and fresh herbs
Dip fish into egg wash, letting excess drip off
Coat fish in the panko and herb mixture until full coated
Place coated filets on a sheet pan or air fryer tray
Air fry at 400°F for about 15 minutes until crispy

Ingredients 🛒

Quinoa (prepared according to package directions)
Chickpeas (rinsed and drained)
Cherry tomatoes, quartered
Bell pepper, chopped
Garlic, diced
Onion, diced
Fresh parsley, chopped
Corn
Lemon juice
4 Tbsp olive oil
Salt
Pepper
Cumin (optional)

Instructions 👩‍🍳

Prepare the quinoa according to the package directions, and allow it to cool slightly.
Add the chickpeas to a large bowl.
Stir in the cherry tomatoes, bell pepper, garlic, onion, parsley, and corn.
Add the cooked quinoa.
Drizzle with lemon juice and olive oil.
Season with cumin, salt, and pepper.
Mix everything together until well combined.
Serve immediately or refrigerate until ready to enjoy.

Salmon Salad🥗🐟🥑✨

Fresh, colorful, and packed with flavor! This salmon salad is loaded with protein, healthy fats, and plenty of fresh veggies, making it a simple and satisfying meal for lunch or dinner. Best of all, it comes together in just minutes! This is a great recipe for leftover salmon.

Ingredients 🛒

Cooked salmon (canned or baked)
1–2 Tbsp mustard
Chickpeas
Chopped olives
Chopped artichoke hearts
Cherry tomatoes, halved
1 avocado
Chopped cucumber
Capers (as many as you’d like!)

Instructions 👩‍🍳

Add cooked salmon to a large mixing bowl
Stir in 1–2 tablespoons of mustard
Add chickpeas
Mix in chopped olives and artichoke hearts
Add cherry tomatoes and chopped cucumber
Scoop in the flesh of one avocado
Add capers to your liking
Gently mix everything together until well combined
Serve immediately or chill before serving and enjoy!
Eat by itself or use crunchy veggies/crackers for scooping.

The birds are on the move! Time for everyone to go outside and start their pasture adventures. All of our birds live their lives outside moving around all day long. With poultry fencing, they are protected from most predators and have the opportunity to free range.

It’s official. Our latest addition, and last lamb of the season, has arrived. In honor of tax day, I’m calling her Revy (short for Revenue).

Spring has started on the farm! All the chicks and ducklings are here! 20 hens, 25 meat birds, and 3 ducks are joining our 22 chickens, 13 sheep, 4 cats, 2 ducks, and Jack, the farm dog. Turkeys will be here in July, and we are still waiting on the arrival of one more lamb.

Our birds are pasture raised, so they will head outside once they are fully feathered, and it’s warm enough.

Keep an eye for more adventure to come.
