Slow process, better coffee.

After the coffee cherries are picked, the beans are laid out under the sun to dry.
They’re turned regularly to make sure they dry evenly and don’t spoil. This step can take days, sometimes even weeks, depending on the weather.
Why does it matter? Because the way coffee dries directly affects its taste. Slow, careful drying helps develop natural sweetness, smoothness, and depth in every cup.
Good coffee isn’t rushed, it’s done right from the very beginning.
