Seriouslly though, Down The Shore with The Woodlands at Phillips Mushroom Farms pecan + oak smoked Lionsmane shrooms is even better this year than last year!

We are honored to have had the chance to partner with our friends who make the most deliciously amazing we’ve ever had the pleasure of indulging in!
Nebula - cave aged 5 weeks, washed with “Silk” rosé multiple times after the 3 week mark. This cheese has 5 intentional surface cultures including multiple strains of geotrichun ( it’s what makes the cool brainy rind!) + multiple corynebacterium stains (orange hue) and an estimated 5 additional strains that are just part of our terroir because we make bloomy rind cheeses!
The flavor and aromas are rich, meaty ( ) perfume, with hints of garlic. The texture of the edible rind has a pleasant waxy chew, while the “paste” packs an intense umami punch.
We hope y’all folks can make a trip to to indulge in this deliciousness, make sure y’all make time for an additional pit stop to go see our friends to pick up some cool mushrooms to take home and our BUFFALO DIP!

Maverick has returned to its OG format!
Quietly at the beginning of this year we began to phase back in small format Maverick, while phasing out the “wedge format” cut from 5lb wheels.
We are excited to return to this standard and have opted to make it a 4oz round so it can be offered at a lower price point.
The beauty of these small rounds is that they offer a more intensely nuanced flavor profile + can age poifectly in their “micro cave” containers.
This also means that our large format Maverick Wheels found and mongered .cheese ‘s NYC location are now thin 2.5lb wheels that also have a more intense flavor profile than when they were 5lb wheels over the last couple of years.

This years box features 2 x flower pressed 5oz “Barn Cat”hearts + 1 x chocolate studded “Red Eye” heart. “Red Eye” is a limited edition coffee roasted, maple glazed beet cheese, with chai spiced walnuts and chocolate. Tyler/ developed this delicious limited edition recipe over the summer and we’ve added chocolate to make it festively decadent!
Red Eye pairs great with & special darks, there are some cheesecake vibes going on but with just the right hint of sweetness.
All orders ship next week, 2 day shipping orders must be placed by Wednesday , 1 day shipping orders must be place by Thursday
