🚨The first Copper River Sockeye Salmon of the season is here!

The Copper River is the birthplace of three wild Alaskan salmon species, including the sockeye, which run through May, June, and July. Every year, these fish make a strenuous, 300-mile upstream journey to spawn. In preparation, they must pack on ample fat reserves to fuel them, resulting in salmon that is rich in heart-healthy omega-3 fatty acids and flavorful oils. This makes the sockeye firm, rich in flavor, and perfect for summer grilling.

At Seahawk Prime by David Burke the menu is comprised of decades of Burkes' "greatest hits," with an emphasis on seafood, prime cuts, and sushi offerings. Sourcing is key at Seahawk Prime, where Burke regularly works with Samuels Seafood Co., ordering a wide range of products including lobster, crab, branzino, salmon, grouper, scallops, shrimp, king crab, prawns, and caviar. The seafood dishes certainly shine on their own, but adding seafood and shellfish to other menu items can elevate them, too.

Burke expresses deep appreciation for the relationship with suppliers like Samuels, noting the extensive process behind every ingredient. “From the fisherman to the purveyor to delivery, there’s an incredible amount of work that goes into getting seafood onto a plate,” he says. “It’s caught or grown, harvested, selected, prepared, shipped and then it reaches the kitchen, where we take it to the next level. That entire process deserves recognition.”

Piedmontese Beef Tortilla Smash Burgers🍔🌮

Ingredients:
1 lb of Certified Piedmontese Ground beef (80/20 recommended)
4 flour tortillas (street-size or fajita-size)
Salt and black pepper
1/2 tsp garlic powder
1/2 tsp smoked paprika (optional)
1/4 cup finely diced onion
1 small jalapeño, thinly sliced (optional)
2 slices of cheese (American or pepper jack work well)
Neutral oil or beef tallow
Sauce:
1/4 cup mayonnaise
1 tbsp ketchup
1 tsp yellow mustard
1 tsp pickle juice or vinegar
Pinch of smoked paprika or mild chili flakes
Mix and set aside.
Instructions
Prepare the beef
Divide the ground beef into 4 loose balls. Season with salt, pepper, garlic powder, and smoked paprika. Avoid over-mixing to keep the meat tender. Press onto the tortillas. Place each beef ball onto one side of a tortilla. Press the beef out thinly so it nearly reaches the edges. Sprinkle diced onion and jalapeño evenly over the meat.

Cook beef-side down
Heat a cast-iron skillet or heavy pan over medium-high heat until hot. Lightly oil the pan. Place the tortilla, beef-side down, in the skillet and press firmly with a spatula. Cook for 2–3 minutes until the beef develops a deep brown crust.

Flip and add cheese
Flip the tortilla so the tortilla side contacts the pan. Place a slice of cheese on top of the beef. Cook for 1–2 minutes until the cheese melts, and the tortilla becomes lightly crisp but still flexible. Remove from the pan, spoon sauce over the top, and fold like a taco or serve open-faced.

Please join us in recognizing Marikate Wolff and Earl Martin for their exceptional commitment and support to our team!👏

Marikate Wolff’s official title is Office Manager, Sales Department, but her contributions to Samuels Seafood Co. span far more than one role. She also serves as our Home Delivery Manager, oversees the Seven Fish Club membership program, coordinates sales employee appreciation events, and assists with the management of offsite events. Her versatility and attention to detail make her an invaluable resource across the organization. Marikate has been with Samuels since February 2017, and is a reliable resource for anything salesrelated. Her ability to seamlessly navigate both internal operations and external customer relations truly sets her apart.

Earl Martin continues to shine in his role as Sales Assistant, providing consistent support to both the Sapphire team and our Pittsburgh team. His day-to-day contributions and dependable performance make him an essential part of the sales operation. Earl has been with the Philadelphia sales team since May 2022 and quickly stepped into a key role supporting our Pittsburgh division. Since then, he has built strong, trusted relationships with both teammates and customers, strengthening collaboration across locations. Known for his affable and pleasant demeanor, Earl is always willing to help, making him a true team player. He also plays an important role as a mentor, training new sales team members, generously sharing his knowledge and experience to help others succeed.
