15 years has gone by in a blink of an eye...15 years ago today the Philadelphia Wholesale Produce Market opened its doors as the largest fully enclosed and fully refrigerated building. It remains a state-of-the-art facility and a key part of the produce supply chain in the Northeast.

With the weather getting warmer, let's talk about tropicals. Specifically, papaya.

1️⃣ The first picture here is a maradol papaya. Maradol papayas are large and heavy, with each papaya weighing about 5 pounds. They are ripe when their skin turns from green to fully yellow. Maradols are a love-hate papaya. Many prize them for their strong musky flavor and aroma, while others find it too strong.

2️⃣ Here is a green cooking papaya. They are picked underripe and never ripen properly post-harvest. Green papayas are typically used as a vegetable as their flavor is mild, fresh, and lightly vegetal.

3️⃣ This last papaya is a solo papaya. They are relatively small compared to a maradol, typically weighing about 1 pound each. Solo papayas are ready to eat when about 50% yellow and have a sweet, tropical flavor.
