the perfect refreshing summer recipe ☀️
cold sesame noodles with pickled cucumbers, tofu, and a creamy tahini sauce
so flavorful and easy to make!

pickled cucumbers (make first):
1 large english cucumber (or 4 persian cucumbers), thinly sliced
1/4 cup rice vinegar
1/2 tbsp soy sauce or tamari
1 tsp sugar
1 tsp sesame oil
optional: 1/4 tsp gochugaru chili flakes
mix everything together and let sit 10 to 15 minutes (or up to 24 hours)
marinated tofu:
1 package Mori-Nu Silken Tofu Firm
juice of 1 lime
1/2 tbsp sesame oil
1 tbsp soy sauce
chili flakes, to taste
gently coat tofu in marinade
sesame noodles:
8 oz noodles of choice (we used udon)
2 large cloves garlic, minced
1 tsp minced ginger
1/4 cup + 1 tbsp Soom Tahini
1 tbsp soy sauce
1 tbsp maple syrup or honey
1/2 tbsp rice vinegar
3 to 4 tbsp water (adjust for desired consistency)
cook noodles according to package instructions, rinse under cold water, and set aside
whisk together tahini, garlic, ginger, soy sauce, maple syrup or honey, rice vinegar, and water until smooth. toss with noodles
assemble:
top noodles with tofu and pickled cucumbers
optional toppings: scallions, sesame seeds, cilantro, sliced red bell pepper, sriracha, lime
