📍We started outside —under string lights and traffic noise, with a hot griddle and a lot of hope.

It was February 2020.
We’d only set up three times before the world shut down.

What followed was a rollercoaster:
Pop-ups, pivots, heartbreak, rebuilds—and a whole lot of tacos.

Three years later, after a wild ride of grit and growth, we evolved into something more.
That something is now

🌸Dahlia is the flowers we grew—with
Born from the same fire. Rooted in the same streets.
Watered by the same hands that flipped those first tortillas.

This Saturday, we come back to where it all began.
Same corner. Same fire.
Asada. Adobada. Papacitos.
No frills—just flavor.

🗣️Chubasco isn’t returning full-time—this is a pop-up-only love story.
A series of collabs, takeovers, and just the right amount of chaos.

Hey it's us and here's an update on a few things in case you missed us because we've definitely missed you.

🌮Yes, unfortunately Chubasco Tacos is closed but not forever, we had to pivot to focus on bigger things.

📍We're Still Here! You can catch us on Roosevelt Row a block away with parking available at the lot across the street. 👀Peep our updated hours on Google & Yelp.

🦑Our menu may be completely different from what we offered at Chubasco but we never half-ass things so we can guarantee you'll like what we have to offer.

Plus keep an eye out for some of your favorite Chubasco items gracing the menu as weekly specials.

P.S. If you loved our 🥩Carne Asada we still have it on our menu as the Taco Perron😉

Chubasco may be closed but that won't stop us from slangin' some 🔥🌮 .

🐄The Taco Perron will have you questioning your existence. Our only beef item (for now) but its all you need.

🦑The Octopus taco will wake up those taste buds you didn't know you had! Charred over mesquite and layered with our signature Chipotle-mayo slaw. Yes that was octopus you just ate.
&
🐟The Swordfish taco (feat. .meat.fish) will turn those pesky-tarians into pescatarians. (See what we did there?)

Also, Keep an eye out for a few new tacos making the menu 🐟🍤 and the classics from Chubasco that'll grace us our specials board in the future.
