Batch it! Use it. Roasted white and orange sweet potatoes and a bunch of unused veg: fennel, yellow squash, cabbage and a handful of peppers. Now what? Well upper right, anytime salad (my breakfast) with fresh arugula and avocado, lemon juice and spices. Or upper left a borscht-like soup with bone broth, batch roasted veg and leftover cooked beets.

Mediterranean love for dinner at my house! I haven’t had spanakopita in over 20 years. Full disclosure it’s not dairy free but it could be. I’ll work on it. My Greek neighbors shared their recipe and I found GF puff pastry and voila! It’s not filo but still Delicious! Then added a chicken and eggplant dish with tomatoes and sauce and lots of herbs.
