🍯 Added Kikkoman Teriyaki BBQ Sauce, then tossed in 1 sliced onion, 1 sliced bell pepper, a little more teriyaki sauce, and 3 tablespoons of jarred minced garlic.

🍜 Added 2 packages of precooked stir-fry noodles and cooked everything together for about 3 minutes until it was all coated in that delicious sauce.

💗 COOKING FOR MS. SELENA — POBLANO CHICKEN CHOWDER 💗

When you love someone, sometimes the best thing you can do is put a little love in a pot. 🥹❤️

Today I’m making a big pot of Poblano Chicken Chowder for Ms. Selena as she prepares for surgery next week. She has been facing so much with courage, strength, and that beautiful smile of hers, and I wanted to make her something warm, comforting, and made with love. 💕

🌶️ Here’s what went into my chowder:
• 1 stick butter, melted
• 6 poblano peppers, diced
• 6 carrots, chopped
• 2 yellow onions, chopped
• 3 ribs celery, chopped
• 3 cloves garlic, minced
• 1 tsp salt
• 1 tsp black pepper
• 1 tsp cumin
• 1 can diced tomatoes & green chilies
• 2 quarts chicken broth
• 2 lbs seasoned, cooked chicken thighs, chopped
• Corn cut from 6 ears
• 1 bunch cilantro, chopped
• 2 cans black beans, rinsed & drained
• 1 cup half-and-half

I sautéed the vegetables in the butter until tender, then added the tomatoes and green chilies, chicken broth, chicken, corn, cilantro, and black beans.

For a little thickness, I made a blonde roux in a skillet using 1 cup of the broth + 1 cup flour, then stirred that back into the chowder. Finally, I added the half-and-half for that creamy finish. 🍲💕

This pot was made with more than ingredients… it was made with LOVE.

Ms. Selena, you are loved beyond measure. We are praying for you, cheering for you, and surrounding you with love as you head into surgery. Keep fighting, keep smiling, and know that your Fairview family is right here beside you. 💗🙏🏼

❤️ A Big Bowl of Love for Ms. Selena ❤️

Today I made a big pot of Lasagna Soup for our sweet custodian, Ms. Selena, who is courageously battling stage 4 cancer and preparing for surgery next week.

If you know me, you know my love language is cooking. If I love you, I cook for you. ❤️ So this pot was made with a whole lot of love, prayers, and hope that it brings her a little comfort during a difficult time.

🍲 LASAGNA SOUP

The Soup:
• 1 lb ground Italian sausage
• 2 lbs lean ground beef
• 1 tbsp Italian blend herbs
• 1 tbsp Kinder’s Garlic & Herb seasoning
• 1 tsp garlic powder
• 1 tsp salt
• ½ tsp crushed red pepper
• 1 bell pepper, diced
• 1 onion, diced
• 2 cloves garlic, minced
• 3 tbsp tomato paste
• 1 large can crushed tomatoes
• 1 large can tomato puree
• 1 quart chicken broth
• 2 cups Parmesan cheese
• 1 cup half-and-half
• 1 box lasagna noodles, broken into pieces

Brown the sausage and ground beef with the seasonings. Add the bell pepper, onion, and garlic and cook until tender. Stir in the tomato paste, crushed tomatoes, tomato puree, and chicken broth. Let it simmer and come together before adding the Parmesan and half-and-half. Finally, add those broken lasagna noodles and cook until tender.

The Cheese Mixture:
• 1 carton ricotta cheese
• ¼ cup pesto
• 1 cup Parmesan cheese

Mix it all together and spoon a little of that creamy cheese mixture into each bowl before topping with the hot lasagna soup. ❤️

Ms. Selena, we are praying for you constantly. You show up every day with a smile and so much positivity, even while facing something incredibly difficult. You are loved beyond measure, and I hope this little pot of comfort reminds you just how many people are standing beside you.

One bowl, one prayer, one day at a time. ❤️🙏🏻

🐇🥔 WILD RABBIT SHEPHERD’S PIE 🥔🐇

This is one of those recipes I completely made up—and y’all, I think I might have created something GOOD! 😂🤌🏼

I had some wild rabbit and decided to turn it into a Southern/Cajun-style shepherd’s pie. The result? OH. MY. 🤤

🐇 Start with the rabbit:
Quarter the rabbit, rinse it, then season generously with Lud’s Sauce, NuNu’s seasoning, and garlic powder. Brown the rabbit really well, add onion, then bake it in my black pot for about 4 hours, until tender.

Let it cool, then debone all that beautiful rabbit meat.

🧅🫑🧄 Cook the deboned rabbit with celery, bell pepper, onion, and garlic.

🥔 Boil yellow potatoes until tender and mash them with a little NuNu’s.

🥕 Add one bag of PictSweet soup vegetables to the rabbit mixture and stir it all together.

Spoon the rabbit mixture into a baking dish, then pile those creamy mashed potatoes right on top. Cover it with extra-sharp cheddar cheese because… obviously. 🧀😂

🔥 Bake at 350° for 30 minutes, then turn the oven to BROIL and give it another 5 minutes to get that cheese golden and bubbly.

Then serve it up and just listen…

OH. MY. 😍🐇🥔🧀

I love taking what I have and making up something completely new in the kitchen. Sometimes the recipes I make up on the fly turn out to be the BEST ones!

🍲 SAUCE PIQUANTE FOR MY FACULTY! ❤️

If I love you, I cook for you… and I sure do LOVE my faculty! 🥰

Today’s labor of love started with TWO Boston butts, diced up and seasoned generously with my favorites—NuNu’s, Lud’s Sauce, and Worcestershire sauce. Then I sautéed that meat until it was good and browned.

Next came 4 pounds of smoked sausage, followed by 3 ribs of celery, 2 bell peppers, and 2 onions. And somehow… I FORGOT TO VIDEO THIS PART! 🤦‍♀️😂 Y’all, this part is SOOO important!

Then I added:
🍅 2 cans diced tomatoes
🍅 2 cans tomato sauce
🌶️ 2 cans Rotel
🧂 More NuNu’s seasoning (also forgot to video this 🤦‍♀️😂)

Then the good stuff—2 cups of dark roux—and let that pot simmer low and slow for about 3 hours, letting all those flavors come together.

A whole lot of stirring, seasoning, simmering, and LOVE went into this pot! ❤️

Because around here, if I love you, I cook for you. And my faculty gets ALL the love! 🐾🖤💛
