http://www.idchompthat.com I have always had a passion for food and family/friend gatherings since I was a young girl. I was inspired!

I grew up in a large Latin family with 5 brothers and 4 sisters. We spent most weekends (when the season allowed) in the mountains “camping,” or at least that’s what I thought we were doing. Actually, my Dad was hunting for our future dinners! I never cared too much for venison, but I appreciate what my Mother did with her cooking skills to help me enjoy it. Some of my favorite memories are the ti

mes when my mother would setup an assembly line for my sister and I to make tortillas. I loved it even though I had to stand on a chair in order to reach the counter! I am not a professional Chef. I have never had any formal training. I have 5 children of my own and keeping food interesting for them was some of the best training anyone could ask for. I worked many catering jobs and learned many creative ways to make and serve food to large crowds. My culinary career began when my Husband and I moved to Chicago, where I met a wonderful man (Jim Haring) fighting cancer. He hired me to prepare all his meals, and they had to fit an extremely specialized diet, similar to a Raw Diet. His went further, "Raw & Rare." While preparing his meals I did a lot of research on Google and found some awesome cookbooks. Through this experience I found out that I have pretty awesome skills and wanted to learn more! Hungry for more, I ventured out making new friends and sharing recipes, laughter, watching the food network hardcore, and devouring every cookbook I can get my hands on. "I'd Chomp That" was born. Its a cooking show featuring local Chicagoans sharing their recipes and stories with me and with you. This journey has just begun and I look forward to every step. Brown-Butter Peach Upside-Down Cake!
There's something magical about turning over and upside down cake and revealing those beautiful caramelized peaches! This one starts with ripe peaches nestled into buttery brown sugar, then gets topped with a tender cake made with Nutty Brown butter. once baked and flipped, the peaches become glossy and caramelized with all those juices soaked into the cake beneath. Served with a spoonful of vanilla whipped cream it was the perfect late summer dessert for a very special Comfort Thursday dinner I had the honor of preparing for the Bishop! It was a wonderful evening around the table.

Tonight, the Friars travel to Peru with one of the country's most beloved dishes Pollo a La Brasa.
Juicy, golden roasted chicken was marinated in traditional Aji Panka, giving it rich, smokey, Savory flavor. It was served with the creamy, zesty Aji Verde sauce. (** I mispronounced Aji by saying "Ah-ha" when it's pronounced "Ah-He"**)
Crisp garlic lemon green beans, roasted herb potatoes inspired by the birthplace of the potato, and a fresh tomato and cucumber salad that brought brightness to every bite. I love sharing not only the food, but also the history and culture behind each meal. every Latin Tuesday is another opportunity to gather around the table and experience the flavors of the world.

Mediterranean monday!
Tonight's table featured Northern style Chicken Cacciatore, tender chicken braised with mushrooms, white wine, herbs, and fresh tomatoes straight from my garden. Served alongside garlic parmesan taglatelli and roasted zucchini finished with lemon and herbs. Rustic, comforting, and a beautiful way to let the late summer Harvest shine.

Lemon Ricotta Cake!
Light, tender, and perfectly lemony with that beautiful richness from the ricotta. Finish simply with powdered sugar and fresh berries, this was the perfect sweet ending to comfort Thursday

This week's worldly Wednesday takes us to vietnam.
Tonight's menu featured Vietnamese Caramel Ginger chicken, served with fragrant Jasmine rice, garlic bok choy, and a crisp napa cabbage herb salad with peanuts. The chicken was the favorite of the night, coated in a rich, glossy sauce made with caramel, fresh ginger, garlic, and fish sauce for an unforgettable balance of sweet and savory. The Friars clean their plates and I definitely call this one a winner!

Tonight's table brought a little taste of province.
Curry de Poulet Provençal, tender chicken simmered in a creamy, warmly spiced provençal curry sauce, served with herbed lemon couscous, and french green beans with shallots. Comforting, colorful, and full of flavor.

A Little Taste of India for worldly wednesday! Rich and creamy Murgh Makhani (Butter Chicken) with fragrant cumin Jeera Rice, fresh Kachumber salad, and roasted cauliflower season with turmeric and Grandma masala.
Warm spices, beautiful colors, and so much flavor in one meal. Where will we travel next?

With the help of my husband while I recover from wrist surgery we put together the simple Mediterranean dinner for the friars. Tonight's menu was Italian chicken scallopini with a bright lemon and white wine sauce, crispy parmesan roasted potatoes, and a fresh tomato and cucumber salad made with vegetables fresh from my garden. Even with one wrist out of commission, there's still so much joy in cooking and serving other Thank you for following along on this journey. God bless you

Nothing beats the flavor of tomatoes straight from the garden. Instead of letting this beautiful harvest go to waste, I turn them into oven sun-dried tomatoes, sweet, rich and bursting with concentrated flavor. They're perfect for pastas, salads, sandwiches, pizza or simply enjoyed as they are because they're that good. Part of this batch will be going in my sourdough bread. If your garden is overflowing this is one of my favorite ways to preserve summer's goodness.

This week's Mediterranean Monday was inspired by the garden. I transformed fresh picked tomatoes, basil and eggplant into a crispy chicken and eggplant parmesan roulade, served over creamy Parmesan polenta with a garden fresh tomato basil sauce and garlic butter long beans. There's something incredibly rewarding about harvesting ingredients just hours before they become dinner. Watching simple garden vegetables turn into a meal like this reminds me why I love cooking for the Friars. What are you harvesting from your garden right now?
