Aubert Chardonnay & Grand Cru ChablisWine Dinner

Saturday – May 31st 6:30pm$175pp

We are super excited to be able to present these wines. The Aubert Chardonnays are some of the most allocated and highly sought after wines in the USA. Charlie and I LOVE top CA Chardonnay AND Chablis too! Two different sides of the Chardonnay spectrum – but it is possible to love them both! A couple of nice sparkling blanc de blanc Chardonnays round out the dinner. (Unfortunately – the Auberts are not available to purchase, but we will have special prices on the others)

“Mark Aubert is the leading light in the American chardonnay story.” James Suckling

“The 2023 Chardonnays are already well-defined, bright, and expressive—compellingly complete… Served to me blind, I would be inclined to guess Corton-Charlemagne…” Lisa Perrotti-Brown

“Reminiscent of Montrachet. Grand cru quality. Goes on for minutes. This is fantastic now to understand it’s potential but will be even better in years to come.” James Suckling

2021 Tan Fruit ChardMaresh Vineyard

Wine Advocate 97 - "The 2021 Chardonnay Maresh Vineyard has pure aromas of red apples, pie crust, almonds and jasmine blossoms with top notes of salty lemon. The medium-bodied palate is generous yet balanced, with a concentrated core of savory fruit tempered by streaks of matchstick and spice. It has seamless, energetic acidity and a long, nuanced finish and will benefit from 3-5 more years in bottle.

97 Jeb Dunnuck - From two vineyards, the 2020 Syrah Grizzly Peak is more introspective on opening, with aromas of boysenberry, sweet herbs, pepper, and lavender. It offers ripe tannins and notes of black tea and pine, with a bit of smokiness on the long finish. Drink 2025-2040.
Pax and Pam Mahle moved to California in 1997 to pursue careers in wine, and after a few years of tasting and sourcing wine from all over the state for Dean & Deluca, Pax realized he needed to be on the frontlines of winemaking rather than behind the scenes, and made the decision to start his own brand in 2000. The Mahles made the bold choice of favoring the “untapped potential” of the Syrah grape at that time. Initially known for his rich and powerful expressions of Syrah that put him on the map, Pax’s style took a major turn to fresher, lower alcohol profiles as he began working with new vineyard sources in cooler, coastal areas of Sonoma. His wines today are balanced and elegant, with a nod to the Old World.

Aperitif 2021 Pieropan Soave Cavalrino
94 Vinous - There’s something especially spicy and enticing about the 2021 Soave Classico Calvarino. White smoke and honeyed floral aromas give way to ground ginger and crushed green apples. It’s deeply textural, nearly oily, and young peach nuances swirl throughout. Residual acids keep you returning to the glass as zesty yellow citrus offsets liquid stone through the youthfully tense finale. This is an absolutely stunning performance for Calvarino, and as primary as it is today, I can’t help but pour another glass. The 2021 was matured entirely in glass-lined cement tanks for one year. The 2021 Calvarino is a powerful terroir representation. 70% Garganega, 30% Trebbiano di Soave

First Course - Tomato and Red pepper tart with parmesan crust
2020 Jermann Red Angel - Pinot Noir

It has a fine ruby red colour. Its aroma is heady, well-orchestrated, and slightly herbaceous. The Pinot Nero variety stands out with elegant finesse. Its taste is delicate, elegant, and full-bodied, and it is slightly sweet and balanced.

Main Course - Beef tenderloin, whipped potatoes and glazed vegetables
2019 Poggio al Tesoro Il Seggio
Intense ruby red in color. The nose offers nice fresh and crunchy fruit, enriched with mineral and spicy notes. The palate is medium bodied with red berry notes. The tannins are elegant, silky, enveloping and very soft. The finish is precise, clean and lively.

Blend: 50% Merlot, 20% Cabernet Sauvignon, 20% Cabernet Franc, 10% Petit Verdot

What could be more American than the California Gold Rush of 1849.  The wine region of the Sierra Foothills owes its founding to that time - enterprising immigrants planted vineyards to sell wine to the lucky prospectors.  Turns out - that region turned into a pretty great wine region - although i...
