We are very passionate about old-world styles, and Hefeweizen (roughly translated as "yeast wheat") is no exception. We put a lot of effort into making this as authentic as possible. >60% German wheat, German Pils Malt, and a touch of Cara malt for a hint of sweetness. Decoction steps are incorporated - boiling a portion of the mash - which adds complexity and improves fermentability. We use German noble hops for low balancing smooth bitterness. And we select traditional yeast to provide a blend of moderate banana-esque esters and spicy clove phenols. We feel Guided By Weisses does justice to the style.
Weissbier is best while fresh. Come drink it up! Cheers🍻🇩🇪

Traditional American IPA with Simcoe, Centennial, Mosaic and Citra hops; moderately bitter with enough malt to provide balance. Clearly yummy.
