Swiss Chard is such a versatile green and highly underestimated.
It is a vibrant leafy green vegetable related to beets, known for its colorful stems (red, yellow, white, etc.) and nutritious leaves, which are rich in vitamins K, A, and C, as well as antioxidants, fiber, and minerals like magnesium, potassium, and iron.
Its leaves and stems are both edible; the stems are often cooked longer than the leaves, and it can be sautéed, added to soups, dips or used in salads.

Its great sautéed as well with garlic scapes, onions and a Tuscan herb olive oil and then dashed with a little Sicilian Lemon Balsamic from Olive & Marlowe before serving.
