Wigle Wh***ey’s history doesn’t just run through Western Pennsylvania, it runs through the entire state.

In the 1790s, Phillip Wigle defended his right to distill and helped spark the Wh***ey Rebellion, which pitted Western Pennsylvania distillers against George Washington’s troops.

Wigle was sentenced to hang for treason right here in Philadelphia but was ultimately pardoned by Washington there.

In 1791, Alexander Hamilton offered American distillers a choice on their wh***ey tax.

Option A: A flat annual fee.
Option B: A tax on every single gallon produced.

If you ran a massive, industrial distillery near a bustling coastal port, Option A was a goldmine. The more wh***ey you pumped out, the cheaper each gallon got. It rewarded scale, capital, and proximity to power.

If you ran a small farm still in the rugged Monongahela Valley, you didn’t have flat-rate cash upfront. You had to choose Option B. You paid on every drop you made, every drop you traded, every drop you drank.

To the coastal elites, it looked like efficient tax policy. To the frontier, it looked like a rigged game designed by people who had never set foot in Western Pennsylvania—and cared even less about the people who did.

They didn’t just get mad. They got calculating. And when the math stopped making sense, Philip Wigle and his neighbors decided it was time to change the equation.

Here’s to the rebels, the farm stills, and doing things the hard way.

The Old Fashioned: A Masterclass in the Original Cocktail
