Hi Ladies, just wanted to share this ribs recipe that I made tonight. It was DE-lish and couldn't have been easier. I used 2lbs baby back ribs which was more than plenty for 2 of us.

NIGHT BEFORE:
- Dry-rub with light brown sugar, garlic powder, pepper, and onion salt.
- Place in gallon Ziploc meat-side down with a little Worcestershire sauce and put in fridge

IN CROCK POT:
- (1/2) chopped onion, (4) finely chopped garlic cloves, and (1) bottle of beer ... I used a cider b/c that's all we had on hand
- Stand ribs on their side, wide edge down, meat towards outside of crock pot
- Pour Sweet Baby Rays BBQ sauce over ribs (just enough to generously coat)
- Cook on high for ~4 hours

PRIOR TO SERVING:
- Preheat oven to 375°
- Carefully remove from crock pot to ensure meat stays on bones (so tender!)
- Place on foil-covered sheet, brush with BBQ sauce, and cover with some onions and garlic from Crock pot (discard beer/broth)
- Bake in oven at 375° for ~10 minutes to caramelize sauce
- Optional: I broiled for about 5 more minutes to get a nice crust

SERVED WITH:
- Steamed green beans, Rosemary/Garlic roasted potatoes and Cabernet.

Crock Pot Puerto Rican Steak & Potatoes

Ingredients:

2 lb. Cubed Steak (or stew meat), browned
1 Onion, chopped
2 tbsp. Cooking Oil
2-3 tablespoons Adobo
1 tablespoon Meat Tenderizer
2 teaspoons Black Pepper
5 potatoes, peeled and cubed
1 cup of lime juice
1/2 cup of beef stock
Directions:

Season steak with adobo, black pepper, and meat tenderizer liberally.

Cut your onions into nice ring slices.

Using a large covered pan, heat a bit of cooking oil. Put your steaks and onion in and lightly brown. Dump meat, onions, and oil into crock pot with potatoes. Add lime juice and beef stock and cook on low 6-8 hours.

Top with fresh cilantro or avocado slices, sour cream, and a pinch of cheese - serve with your favorite sides.

Rum Chata Pumpkin Pie Pudding Shots

1 small Pkg. pumpkin spice instant pudding
¾ Cup Milk
3/4 Cup RumChata
8oz tub Cool Whip

Whisk together the milk, liquor, and instant pudding mix in a bowl until combined. Add cool whip a little at a time with whisk. Spoon the pudding mixture into shot glasses, disposable shot cups or 1 or 2 ounce cups with lids. Place in freezer for at least 2 hours.

Crock Pot Pineapple Chicken

3-4 frozen chicken breasts

1/2 c. teriyaki sauce

1/2 c. soy sauce

1 can pineapple chunks, drain half the juice out

Crushed red pepper flakes

1 clove of garlic, minced

Spray the crock pot with nonstick cooking spray and add chicken breasts. Pour soy sauce, teriyaki sauce, and pineapple chunks over the chicken. Sprinkle as many red pepper flakes on top and garlic as desired. Cook on high for 4-6 hours. Shred chicken with two forks in the crock pot and serve over rice.

Beef Stew w/ Dumplings.
3 lbs Gravy Beef - Diced
4 med Potatos
4 med Carrots
2 cups Frozen Mixed Veggies
1 Onion - roughly diced
1 pkt Chicken Noodle Soup
1 can of Tomato Soup
1/4 cup BBQ Sauce
Splash Worchestshire Sauce
1 tsp Minced Garlic
1/4 Water
Pepper
Moroccan Seasoning (optional)
I mixed Water, Chicken Noodle Soup, BBQ, Worchestshire Sauce, Garlic, pepper & Moroccan in a bowel first then poured over other ingredients.
Cooked for 7hrs then I added the Dumplings.

DUMPLINGS
2 cups plain flour
1/2 tsp salt
2 tsp melted butter
3 tsp baking powder
2 tbls Parsley
1cup milk
Mix all ingredients than put small balls on top of stew and cook for the last 30-40mins. (I did Mine for an hr ).
