Laurel's Drunken Fruit Jam is exactly the kind of recipe you want to have on hand this season.

Laurel is a member of our Facebook group, and a while back she shared her recipe for this jam - in her words, "these are all the rage for charcuterie, social gatherings, weddings and they all taste delicious." My beautiful , oily, fragrant Ugandan beans arrived yesterday. Ugandans are some of my very favorite vanilla beans, prompting me to give considerable thought to how I wanted to best use them.

I have more than an ample supply of mature vanilla extracts and made a batch of vanilla bean paste earlier this summer…I decided to create three 24 oz each double fold extracts with my pound of Ugandan beans.

Vodka will provide a thick Ugandan extract next year. Gold Rum will mature in early 2028 and KCSM will be well ripened in time for Christmas 2028 baking…though I’ll prolly let that sit longer to get even richer.

I love the monthly buys, whether keeping the pound for my own use or for splitting it with extracting friends. Thank you VP for making wonderful bean varieties available at affordable prices.

What makes a holiday extract different from an everyday one? Dawn N., one of our favorite extract-making pros, calls this her Vanilla Holiday Extract because she uses it from Halloween through New Year's Eve.

She starts with Sailor Jerry's Spiced Rum β€” already carrying notes of vanilla, oak, clove, and cinnamon β€” then builds on it with vanilla beans (100% Madagascar, or a 50/50 mix with Mexican for a hint of caramel), a cinnamon stick, and a smashed nutmeg.

A spoonful goes into black tea for Holiday Tea, or a dash into a Hot Toddy, and it pairs well with pumpkin, apple, cranberry, and fig dishes.
