Hi all, lately we’ve had a lot of people asking about gluten free goodies! I just wanted to share a little bit of information and the reasoning behind why I don’t offer any “gluten free” goodies. My bread is 24 hour fermented so contains minimal gluten, but it is *not* gluten free and not safe for celiac folks.
First and foremost- gluten is an airborne allergen. It’s not as simple as vigilant sanitation, constant counter wiping, etc. Because I have a gluten kitchen- there are gluten particles everywhere at all times.
This leads to my second point- in order to have TRULY gluten free items, I would have to have an entirely separate kitchen. An entire separate house and an all new fridge, oven, mixer, and utensils that have never had any gluten on/in it. Unfortunately I am completely self funded and this is not feasible.
My final statement is that food integrity and safety are always my foremost concern. My step father has a dairy allergy so bad that he is hospitalized with any dairy consumption and has to have his stomach pumped. I use disposable liners on my bannetons, fresh blades and parchment paper for baking, and separate cooling racks for allergen items. I do 4 loads of dishes (minimum) on prep day because everything is sanitized by my dishwasher.
I would never, ever be able to live with myself if I knew I could seriously hurt someone, and gluten is a risk I am not willing to take. I would rather lose a potential sale than have someone be hospitalized with an autoimmune response.
