Copacabana Sausage Hashbrown Bites! Crispy and cheesy, sausage hash brown bites are perfect for brunch or as an appetizer for a party

INGREDIENTS
1 lb ground sausage, uncooked
8 oz cream cheese, softened
1 1/2 cups Bisquick
1 1/2 cups cheddar cheese, shredded
4 cups shredded, frozen hashbrowns
PREPARATION
Preheat oven to 400°F and line a baking sheet with parchment paper. Set aside.
In a medium bowl, combine sausage, cream cheese, Bisquick, cheddar cheese, and hashbrowns, and mix until well combined. Divide into 1 1/2-inch balls and place on the prepared baking sheet.
Bake until cooked through and browned, about 20-25 minutes. Serve, and enjoy!

Ingredients
1 pound Toscana Spicy Sausages cut into coins
3 tablespoons vegetable oil divided
3 eggs
1/4 cup carrots chopped
1/4 cup red pepper chopped
1/4 cup peas
4 cups white rice cooked
1/4 cup soy sauce
3 green onions sliced

Instructions
Add 1 tablespoon of vegetable oil to a deep skillet and turn to medium high heat. Brown Toscana Spicy Sausages on each side. Set aside.
In the same skillet cook eggs and chop up while cooking. Set aside with the sausage.
Add 1 – 2 tablespoons of oil and cook carrots and peppers 1 -2 minutes until softened.
Turn down to medium heat. Add soy sauce and rice to skillet. Stir well and break up chunks of rice until all ingredients are mixed well.
Add eggs and sausage back to the skillet. Stir well. Serve warm and enjoy!

Halloween appetizer with Smoked Calabresa! Mummies in Blankets! 🎃👻

How to Make Mummy Smoked Calabresa!
Heat your oven to 375F and line a large baking sheet with parchment paper.
Roll out the crescent roll dough on a lightly floured surface and press the perforations to seal it into one long rectangle. Cut into thin (¼” thick) slices.
Wrap the Copacabana Smoked Calabresa with the crescent dough (make sure to leave a space for the eyes) and place them on the baking sheet.
Bake until the dough becomes golden brown- about 12-14 minutes.
Right when the mummies come out of the oven, place the candy eyes into the dough.
Recipe Tips
Give the mummy Copacabana sausages only one eye for a fun cyclops look!
You can make pigs in a blanket in the air fryer.
The crescent rolls expand and the hot dogs can shrink when cooked, so be sure to stretch and wrap the dough tightly around the hot dog.
Leave the Copacabana sausages whole for a perfect kid-size meal.

How to Make Mummy Smoked Calabresa!

Ingredients
Preheat the oven to 220°C/ 200°C (fan)/ 425°F/ Gas
Boil a kettle
Combine 250ml (400ml) of boiled water with the vegetable stock cubes and whisk to combine
Add the veggie mince to the stock and leave to soak until step 5
Peel and finely dice the red onion(s)
Peel and grate (or finely chop) the garlic cloves
Cut the broccoli into small florets
Place the florets on one oven tray and the gnocchi on a separate oven tray, drizzle both trays with 1-2 tbsp of olive oil
Season to your taste with salt and pepper and put them in the oven until the broccoli and crumbled sausages is crisp and the gnocchi cooked (approx. 20 min)
Heat a wide-based pan with 2 tbsp (3 tbsp) of olive oil
When hot, add the red onion with a pinch of salt and cook on medium-low heat for 8-10 min or until softened and starting to caramelise
Once caramelised, add the garlic and cook for a further min, stirring constantly
Add the soaked veggie mince to the softened onion and stir fry on a high heat for 2 min
Add the tin(s) of chopped tomatoes and bring to the boil
Boiling, lower to a medium heat and reduce by half (approx. 10 min) or until it's thickened and combined.
Add the balsamic vinegar and 1/2 tsp (1 tsp) of sugar and the dried oregano to the tomato sauce
Mix well, season with pepper and once it's reached a bolognese consistency, remove from the heat
Serve the veggie ragu with the gnocchi and broccoli scattered over the top! Enjoy!

These juicy peppers with butterbean mash - a revelation! It's almost instant, with the bonus of being tastier and more nutritious than potato.

✴️Sausage & Bean Stuffed Peppers🫑
✴️Serves 2 adults + 2 tots
✴️Prep 15 minutes
✴️Cook 45 minutes

✴️Ingredients
3-4 peppers
1 can butterbeans
2 cloves garlic
Handful grated smoked cheese
Generous splash milk
Toscana sausages
2 teaspoons paprika
Handful breadcrumbs
Drizzle olive oil
Handful of fresh chopped parsley

✴️Directions
Preheat oven to 200°C. Half the peppers lengthways, hollow out and place on a baking tray.
Make the mash by blitzing the butterbeans, garlic, cheese and milk in a blender until smooth.
Fill the peppers.
Chop the Toscana sausages and place on top of the mash. Sprinkle over the paprika and breadcrumbs.
Drizzle in olive oil and bake for 45 minutes until golden. Sprinkle over the parsley and serve up. Season your portion.
