Southern-style, black-eye pea:
Ingredients👇
1 pound Black Eyed Peas
2 pounds Smoked Meat (Turkey Legs or Ham Hocks)
1 cup Celery chopped
1/2 Green Bell Pepper chopped
1/2 cup Green Onion chopped
1 medium Yellow Onion chopped
1 pound Thick Bacon (small cut)
2 teaspoons Season Salt
1 teaspoon Garlic Powder
1 teaspoon Onion Powder
1 teaspoon Apple Cider Vinegar
10-12 Garlic Cloves Minced
1 & 1/2 Peppercorns
3 Bay Leaves
7-8 cups Chicken Broth (low sodium)
1 teaspoon Hot Sauce
1 1/2 tablespoon Fresh Thyme chopped
Cooking Method👇
Over medium-high heat cook bacon until crisp, set aside bacon. Use the bacon fat to cook onions, salary, and green peppers for 7 minutes. Add bay leaves, garlic, green onions, thyme along with all spices and cook 2 more minutes. Add broth, black-eyed peas, hot sauce, & vinegar. Bring to boil & add drum stick. Simmer for 1 hour. Take out meat, debone, and cut to bite-size pieces. Add meat back to the pot & simmer for another hour (covered). Add salt & pepper as needed. Y’all Enjoy!
